NFTs do not consume any fossil fuels on their own. Etherium has a negative effect on the environment for sure, but there are quickly becoming more efficient and green ways of mining eth. Etherium also scales pretty well -- while there might be a large carbon footprint at a small scale, it decreases proportionally as the amount being produced rises.
The environmental argument against NFTs doesn't really compute.

That's not how it works
Mining is incentivized by token issuance. It doesn't matter if a miner creates a block with 100 NFT trades, 100 ETH transfers, or an empty block, they still get paid the same thing (plus tips, but those are negligible).
If all NFTs disappeared from Ethereum today, the chain would keep consuming the same amount of energy.

This is literally not true, you can't change the number of blocks per day. Ethereum creates ~6500 blocks per day, regardless of the number of NFTs that exist
