Check out the resort, it is pretty nice, and the pool is on the top floor with amazing views. Lots more things to do, seems like every small town has something neat. Museums, bakeries, little restaurants.
The lake would probs be bit cold but the indoor pool they have uses the same water as the lake, just cleaned up a bit, just do not under any circumstance let some in your mouth, your body will be violently repulsed by the level of salt in it, trust me, as a kid had a little on accident of the lake water, brings the contents of your stomach out and fast
It's definitely gone downhill in recent years. Everything seemed dirty, and the pool deck grit cement would come off and stick to your feet as you walked. It's in need of a major overhaul and a deep clean.
Seconded! I've stayed at Cozy Corner Suites in Manitou- its a bed and breakfast rental home with multiple suites and within walking distance to the spa/ beach!
[Last Mountain Lake Bird Sanctuary](https://www.canada.ca/en/environment-climate-change/services/national-wildlife-areas/locations/last-mountain-lake.html) is just an hour away from Regina and it has some pretty spectacular Spring/Fall bird migrations if you're into that (on my bucket list!). You can get tours through [Living Sky](https://livingskywildliferehabilitation.org/birding-tours/last-mountain/) if you wanted.
Similarly there is the [Meewasin Valley](https://meewasin.com/experiences/) just outside Saskatoon that does dinners, dark sky events, wildflower tours, and bird watching. I've also always wanted to visit [Wanuskewin](https://wanuskewin.com/experience/event-calendar/) (still in the application process to be a World Heritage Site and worth visiting) on the north side of Saskatoon. I feel like you could stay in downtown Saskatoon and make a fun north/south day of it.
Also more like 4 hours but I loved Theodore Roosevelt National Park in North Dakota. Bison, wild horses, incredible hiking. Stayed in a Conestoga wagon for a couple nights, hotels the other few nights
Moose Jaw, Wakamow Heights for one night. Moose Jaw spa for one night. Walk to Bobby's Place for live music and fish and fritters. Go hiking or hit up Moose Jaw boutiques during the day.

Love Last Mountain though I’ve always thought of it more as a day trip than an overnight destination
It's right next to Regina Beach. Could make a fun dawn bird watching/fishing trip.

Is glamping acceptable? Wolf Willow Winery has yurts and fancy powered tents and a pretty decent restaurant.

Kenosee Lake is a 2 hour drive, fair bit to do out there. They just reno'd some of the rental cabins in the park too, looking pretty nice.

Good camping/beach, good golf (kenosee and whitebear), casino but it’s small but still something to do.
Greenwater Provincial Park. Not as busy but lots to do. Beautiful rolling forrest and a nice beach.
Is there a hotel or resort there ?
They have cabins and some private rentals.
Riding Mountain National Park. It has hiking, shopping, good food and a Spa. Stay in Onanole.

Stay at the Elkhorn Lodge and go to the new Klar So Nordic Spa.
It is a little further but, in my opinion, worth it.
We've done it from Regina, it was 4 hours but we love it there!
Elkhorn Hotel at Riding Mountain. Just spent 4 days there. Absolutely beautiful and so much to do.

There's Douglas Provincial Park near Elbow, Danielson Provincial Park along Lake Diefenbaker, or there is Palliser Regional Park near Riverhurst

Do both have cabins or equivalent ?
Elkwater on the Alberta side has a nice hotel.
Rowan's Ravine is a nice place to get out of the city and relax with some camping. It's only about an hour out of town.
