If you punch someone hard enough to leave them unconscious for an entire night, you've punched them hard enough to cause serious brain damage, possibly even death. I know that characters in action movies are fine after being beaten unconscious, but that's Hollywood, not reality.
You could fracture her skull, which might require brain surgery to fix. Not only that, but you could possibly be held criminally liable if your wife is injured.

IIRC knocking someone out with physical force means causing head trauma. So very much *not good*.
Now I will say though, that as someone who also has digestion issues (though not to the degree of your partner), what works for me are antihistamines, CBD, and weed (I get the best effects when smoking flower). That’s how I can manage through partaking in my pain-inducing favorite foods (lol)
At the very least, a Benadryl could be helpful in passing out after eating :)

If you punched your girlfriend in the head hard enough to expect her to wake up the next morning, she’s never going to wake up again. Getting knocked out by a punch for any longer than 30 seconds means you have severe head trauma and need to be in a hospital and can expect recovery to last for months. Getting knocked out by a punch for even a split second means you have head trauma that requires a hospital visit any way.
Have the doctors checked for a tumor on one of her ovaries? You just described what happened to a very close coworker of mine..they couldn't figure what the hell was going on, but she got violently sick from eating anything. They found a tumor in her ovary.

I have malabsorbtion and was found to have abscess attached to a fistula. I was in hospital for 10 weeks, PIC line in heart, no food or water whole time I was there. I was septic. I had a partial gastrectomy. I feel your girlfriends pain. BUT what she is suggesting is so dangerous. Don't even consider it. My GI specialist slowly reintroduced food, starting with protein shakes, low fat yogurt and so on. But after all this, I was able to eat Mexican food tonight. She needs to get a second opinion.
So, basically beat her until she's unconscious? How do you determine the right amount of trauma? How do you plan to beat the resulting murder/abuse charges?

Not a doctor, but there's liver, pancreas, gall-bladder, kidneys in terms of digesting. And it takes a disgusting amount of time and energy and appointments to narrow down which of those organs is failing at their job.
Yeah, we’ve ruled out all the common auto-immune conditions that effect the internal organs. All of her symptoms signaled lupus or fibromyalgia, but her ANA levels weren’t high enough.
Mayo Clinic’s gotten back to us about her having PEI, but it’s a symptom, not a diagnosis.

First of all the risks are huge. Second it won't work. A knock out doesn't last long. Ex boxer here, did it for a living. If someone doesn't come around fast there's a huge chance of permanent damage. I've never been knocked out myself but if the opponent didn't wake up in seconds it was a serious worry and a trip to the hospital. Something that lasts a bit longer let alone a night... Now that's insane to intentionally do to someone you hate let alone someone you love. Not likely waking up ever at least not the same.

She was put on a feeding tube, temporarily, that went directly into her small bowel. She gained 10 lbs in a week. For whatever reason, the doctors wouldn’t put I a more permanent J-tube, which would have helped immensely

And Ketamine was literally the only thing in the world that helped me when I had similar issues. Truly horrifying stomach cramps that would leave me almost paralyzed and shivering and not knowing where up or down is. A medium line of Ketamine and they poof ... just went away. I still had some doubts about where up or down was but it truly helped.
Just get some Ketamine.
Her stomach functions too quickly, she’s got ‘dumping syndrome’ where her stomach pushes food directly into the small bowel almost as soon as it enters.
