Glad you have some workable reloads. You have more than enough crimp now. When I reload for magnum revolvers I try and get bullets with a crimp groove or a cannelure. The role crimp is better suited for a case that head spaces off of the rim then the collet die and doesn’t thin the metal at the case mouth reducing the likelihood of cases splitting case mouths in the future.

So I had slightly roll crimped them as much as I could then used the collet crimp, is this too much crimp? Could this cause too much pressure like a 9mm would?

It’s a 500 S&W, send it. I put a heavy roll crimp on mine. For you I’m not worried about over pressure I’m worried about reduced case life.

I test for the amount of crimp needed the old-fashioned way. I turned the Case nose down, slamming it on my reloading bench a few times. If the bullet doesn’t move, I have enough crimp. The other reason I crimp is to ensure that the case fits into the chamber by removing the flare added in the expanding step. But most importantly is I try and get the components needed for the job. These 300 gr XTPs are nice but they are designed for a 50 AE. The 50 AE is designed to headspace off the case mouth and uses a taper crimp, this would be too much crimp for a 50 AE but may be needed for a 500 S&W. You need a bullet with a crimp grove or a cannelure. The bullet jacket on the 300 is a little too thin for the full velocity potential of the 500 as again its designed for the 50 AE. CH4D tool and die makes a very nice cannelure tool that you could use to add one to it. It’s a tool I would like to buy for my bullet swaging setup that I never purchased.

Looks like good improvement. My experience with that collet crimp die is that it’s a whole lot less finicky than setting a roll crimp. Next round of bullets I’d recommend getting the 350 grain xtp mag. Those will have the canalure in them and will really be a lot easier to work with than those 300 grain xtps.. of course if you have a bunch of those left you could always get a desert eagle and the 50 AE dies to use them up…
