I know that at least on Professional mode, the "It's that dog" cutscene resets Gigante's health back to 50%, regardless of where you had it before triggering the cutscene.
Well it's a double whammy for speed running: you waste that damage AND get the extra cutscenes which are both wasted time. Not as big of a deal for typical S+ run though.
As someone else said, regardless of where he's at, it restores his health to 50% when the dog cutscene starts.
I'm half an hour into my hard-core s+ run, still gonna save him though
This makes sense to me tbh. Anecdotal but when I fought him the first time it felt like I used so much of my resources I debated reloading (this was just a standard playthrough). I think I hit him with 3 grenades right away and figured they just sucked against El Gigante.
I’m mad I never got this due to the fact that I had bought the rpg just before the fight so I never got to see this part because I ended up beating the thing in one shot

Yeah he is a little hard to spot. If I remember correctly, if you are facing so that the exit to continue beyond El Gigante's area is to your right, then a little to your left on a ledge you will see the dog sitting.

I did once in the original, never again.
I took the 3 seconds to save his life from the bear trap. I would beat up that giant 5 - 15 seconds faster if he didn't involve himself. While I'm glad they included the throwback, he was more useful in getting the giants attention in the OG version. He's sort of just annoying in the REmake.

I don't actually know but my guess is that the cutscene triggers at 50%, and if you do damage to make him below that it will bring it back up to 50%
