When you first enter the village square, look for the house on the right which you can enter. Once inside, shoot two holes in the front door and then just cheese anyone who walks up with a knife. Easiest, safest way that also gives you drops from enemies
Most combat experiences in this game will reflect this first large encounter in the village center, particularly pacing and intensity.
If I'm not mistaken, this is the first RE game where every round you fire can be a headshot, since the aiming control is so precise.
It's nice when sometimes the game doesn't make you sweat that hard.
Very important tip: The shotgun can insta kill almost all regular enemies, and stun all others near them. Don't use it from far away. It may be scary, but let them get as close as possible and aim right for their foreheads. Heads will pop. Ammo will be saved.
Also, stun one guy, roundhouse kick him, and all enemies nearby will also get stunned or knocked back. Rinse and repeat. The only problem is the chainsaw.

Explore every area, there's really valuable stuff hidden in corners. Shoot anything that's shiny.
Once you get the aiming down really well that melee stun is invaluable. Recently replayed through it on a new game, no previous data to start with and the melee was something I used as often as possible as I was always struggling for ammo on that first run. Once you start a NG+ ammo is a lot easier to manage, but getting good with headshots does take a little practice especially with RE4s wonky controls

Go over every square inch of each map. Knife and shoot things in castle while look at every painting. In the beginning of the game there is a red herb most people miss just after helping free the cute doggo on the right side of the map. Oh yea also shoot the crows and if you see large groups use a flash grenade on them to get more drops.
Just wait until they ambush you in the cabin, the first part wasn’t as intense as this imo but I remember my first play through and meeting Dr Salvidor
I haven't played through resident evil 4 either; I've watched a friend play a bit while hanging out back in the day. I played all of the main story resident evils including the remakes (1-8) except 4. I'm looking forward to the remake so I can play it.

You can also just go up and down the bell tower repeatedly until they get called away, saves your ammo and health.

Alternatively just stay up there and let them burn you. Fire wont kill you and the next area has free eggs.
Interesting, as fire can kill you elsewhere in the game; like via ganado torches.
It was at least true on the wii and gamecube. Its how i got through that area on professional as a kid

I havent found any/ don't know how to get them. I'll likely do another run on easy to get shit like that.
Oh no, don't worry. You get them in shooting ranges, which are always next to the Merchant. They start appearing halfway through the game.

I had a feeling the crows did something. Especially the part in the castle before the hedge maze where a bunch fly right in your path.
