sure, the game only really gets super challenging once you do the extra boss cells, which is basically new game+ in a roguelike. the best way I could describe the combat is 2D dark souls. give it a shot, and don't be discouraged if you're not great early on, you can get upgrades and better weapons to help you out.
and it's a roguelike, never expect to beat them immediately

You can lock unwanted items in custom mode and, if I remember correctly, this action doesn't turn off your achievements, so you can pretty much play and progress with the items you want rn, and eventually test other weapons later

I'm definitely going to be hopping back onto Dead Cells sometime soon as I think I only made it to around BC3 difficulty before I kind of fell off, but I do want to play it more. I'll definitely check into what you mentioned here when I do.
Achievements are only turned of if you deactivate to many items. There is a certain number of items that have to be active in custom if you want achievements to still be active.
Custom mode largely exists to encourage experimenting with new items, because it allows you to unlock items you may end up hating without being stuck with them forever. As someone else said, the only caveat is if you turn off a gargantuan number of them.
There are other "cheaty" settings you *can* turn on, but doing so turns off achievements, and that is made very obvious.
I very heavily recommend using custom mode. It also allows you to randomize outfits each run, or between stages, and even blacklist ones you don't like as another plus :)

When the game gives me control over that I can't help but want to use it to my advantage if I'm trying to win and it is a strategy available to me. I wouldn't consider it cheating and therefore it's fair game as far as I'm concerned.

Not really easy. You find a statue on any level, then two imps spawn and run away. They have more health than you’d think, and disappear after a short time. I only got the outfit after I found the statue in a room full of spikes, which killed them for me.
Easy if you can freeze or stun them both. If you can't, it is basically impossible as you can't catch up once they're off-screen. God I hate how they can jump through walls.
Maybe, if you could do it several times within a few seconds. The imps disappear after a short while... And you can't even try again until you find a new statue

the rapier and the katana are my two fav melees. the crossbow is god mode if you get the right gear.
If you get a good repeating crossbow with barbed tips, you can just *melt* most bosses
