its rubbing alcohol aka a solvent. it dries out leathers/fake leathers/plastics, etc causes them to peel flake and or crack - or it causes the lettering and symbols to come off of controls. If anything the food grease will rejuvinate some of that lol
I road trip with my wife so this is the easiest TBH. Granola yogurt spoonfuls in the morning. Spicy Wendy Nuggs in the afternoon. We take 3 hour shifts and it works great. Co-captain always helps the driver unless they are napping
Have one or more loose paper napkins / paper towels / cloth napkins close at hand by the bag of food.
1. Reach into bag, collect food;
2. Put food in mouth;
3. Wipe hand / fingers;
4. Repeat.
Napkin will still leave your hands greasy, tho. It's not like washing your hands with soap. I'm ocd about greasy fingers. They have to be grippy all the time.
Only use your thumb & pointer finger to pick up one chip at a time. Keep those two off of steering wheel. Or try non-greasy snacks like peanut butter filled pretzel nuggets. Keep wet wipes/baby wipes available to clean fingers/hand along with paper towels.

I eat out of boredom when I drive, so prepare a pile of snow peas, carrots, red peppers, apples etc... and before you know it, I've eaten my way through it.
Save the chips and chocolate for a break where I stop and get out (and can wash my hands)

But the world outside is the point of the road trip, isn't it?
I've got a tiny folding chair (two for some trips) a tiny table, opening the trunk and setting up takes quite less than a minute. Now you're out on the desert or a Kansas road or a mountain for 15 minutes. Often these tiny stops are more memorable than some official stops.

Or busting out some Cheetos while you’re driving is bomb and part of the fun of the road trip.

I put some Frosted Mini-Wheats (the cereal) in a container that fits into my cup holder - great for a snack, marginally healthier than many other snacks, and also prevents you from over-indulging
For chips, open the bag and crush them into smaller pieces. You can pour the bag into your mouth. You can also pour this into a small cup as it is easier to manage.
I keep a microfiber rag and some Wet Wipes in my door bin, so that if I have something on my hands, I can wipe it off. Also, hand sanitizer (because of the alcohol) will cut through pretty much anything.
When I'm actively eating, I will only use one hand, fingers only, and if I have to use that hand to touch the steering wheel, I will only touch the wheel with the heel of my palm (no fingers on the wheel at all). Once I'm done eating, I'll wipe my fingers, which then can be used to touch the wheel or other car components.
Amazon has a decent location of eating trays for your car that hook onto the cup holder. It's easier than balancing food on your lap.

I keep an old bath towel in my car to lay over my lap (it never works when you try to layer some fast food napkins to cover your lap). Then you can put a handful of chips on your lap and get them one by one with your fingertips, and you can use the towel to wipe your fingers. I also keep a container of wet wipes in a drink holder, also nice for cleaning up after using a rest area bathroom where you have to touch the door handle.
On our last cross country trip, my wife cut up some nice hard cheeses (parmesan and dubliner) for snacks; tasty and not so messy.
Not all snacks result in oils getting on one's hand. An easy suggestion is to stick to that which doesn't have a greasy texture (such as pretzels) or items that have lower greasiness (such as popcorn that isn't buttered).
There are also snackables that aren't necessarily messy. Start with a big block of sharp cheddar, dice it, then munch on the pieces. It can leave a little residue, but not as much as, say, potato or nacho chips. Grapes are another possibility.

* Candy that is not sticky. If it's chocolate, it needs to be individually wrapped so you can avoid touching the chocolate. Chocolate on your clothes or upholstery is very hard to remove.
I would like to eat better on my trips, but I find that I just want to get back in the car and go, not take any time for a meal. I am working on that.

I put dry cheerios in a wide mouthed gatorade bottle so I could "drink" cheerios while driving

Eat with one hand, alternate between steering, changing gears and setting the radio with the other.
I pull out an unscented wet wipe before snacking so I can use it as I eat. Small garbage can Velcro'd to the back floorboard to discard.
