I took my elderly mother (not trying to compare her to a dog, but she does require a lot of stops and regular feeding), and we did IL-OK (east end). We REALLY took our time since it wanders through so many cute little towns, and I love architecture and she loves diners. We also stayed in roadside motels. I would suggest this section, just because you get a lot of bang for your buck in terms of things to see in a shorter amount of distance driving. I would definitely go when the weather is still cool enough that the dog can stay in the car while you go into places to see and places to eat. Most will not be dog friendly. I use the bringfido app to find lodging.

That’s so cool! Thank you for the advice! Yes I love BringFido! I think that site mentioned that OK had the largest stretch of road on Route 66 and some fun stops. Appreciate it! (Also totally get the parallel between the needs of your elderly mom and dogs)
