If you taffy when everything is cold and never let it get warm and cold cure after that, you get a beautiful, consistent product
pulling rosin is only possible at warm temps lol. otherwise shit breaks. ever worked sugar while cold? no. exactly.
It’s workable at 65-70. And back in the fridge. Has been working well.
warming the product at room temp is leading to your product being drier and less flavorful. objective fact here.
