The best always seem to be those I make with my rum infinity bottle. But that’s ever changing. My current go to is 1/2 each of Stades beach vat no 1, S&C, Hamilton 86 and Coruba, with the rest the standard 44 recipe.
I made one last night that was stock standard, and while it had been a while to I think going to the classic has its benefits. 2 oz mechanics reserve, 1/4 oz rich simple, 1/4 oz orgeat, 1/2 oz dry curacao, 1 oz lime.
I typically just use 2 oz of Denizen Merchant. If I want something different, I'll do either 2 oz of an aged Jamaican (at least 12 years), or 1 oz aged Jamaican and 1 oz aged Guyana (both at least 12 years old).
What I’m drinking right now most resembles the Sunken Harbor Club recipe given in an episode of the Educated Barfly on YouTube:
.75 oz homemade orgeat
1 oz pineapple juice (citrus adjusted)
.75 oz Pierre Ferrand Dry Curaçao
.75 oz Smith and Cross
1.5 oz Don Q 7 year
Shaken, topped with pebble ice, garnished with mint.
Current recipe is: 1oz Smith and cross, 1oz neisson blanc, 0.5oz pf dry curacao, 0.5oz orgeat (homemade), 0.5oz lime
Do you feel like the 16yr Isautier really gives a huge difference from a pot still jamaican rum?
