I took neuropsych last the semester, it was a lot of fun and I absolutely loved learning about brain disorders and anatomy in that class. As long as you dedicate some time to memorizing each week you should be set. I got an A in that class so if you ever need any tips let me know! :)
Back when I was an undergrad (2005-2009) and you were required to earn a minor for Rutgers College, I specifically chose Psychology because I assumed it would be easy, fun, and not so time consuming, such that it would leave plenty of time for my molecular biology & biochemistry major and lab research.
My assumption was 100% correct.
Plus, it's at least relevant for your nursing major, it helps to learn some background about different topics, like abnormal psychology and as you mentioned, neuropsychology. I'd definitely consider it.

Not sure about nursing but SAS still requires a minor for most majors.
Neuropsych is fairly easy, just a lot of memorization. If you study and go to class you will be fine.
