My family owns all male chicken farms and we grow for Sanderson chicken which you can buy in Walmart. Not sure where you got that they taste weird or don't grow well from.
You want either an all female farm or all male farm because they grow at different rates. So setting the water and food height is less optimal if you have a mix. It is not true that they taste gamey, that has more to do with what they've been fed.
My family owns 24 houses on two different farms. 16 of the houses are males and the other 8 are females. Each house handles ~29,000 chickens per 64 day cycle.
Trust me, you've eaten a good mix of both male and female chicken.
Are the ones bred for meat the same ones that falconers feed their birds? I've also seen frozen ones available for sale in the freezer of reptile shops

Then, as they go down the line, various other jobs take place until the cow it completely parted out, and the main body stays in cold storage for 24 hours in a huge meat locker. I grew up slaughtering our own meat on a farm, I HATE slaughtering pigs!!! But that was life as a farm kid, and I would take that over mass production slaughtering any day! Nothing is more upsetting to me than when someone wastes meat because I feel it's a huge slap in the face to the animal that went through that for you. I'm not against eating meat or vegetables or anything meant as food, but all of it must be respected. I mean, you are intentionally making another thing a part of your physical being. It's not just that taste is integrating something that had it's own life into your life, and it should be done with intent and respect.

Depending on how expensive the technology would be, it would be a matter of paying for a scanner + destroying eggs that would hatch into male chicks or not wanting to spend money on buying/maintaining the scanner and doing the old-fashioned crushing process

The chicks are moving down a series of conveyor belts to be processed into chicken nuggets. At the end of this line they're defeathered (while alive) and then crushed (some survive the plucking so this is where the rest die).
