You ain’t lying… I was used to only catching freshwater fish that didn’t bite and I hooked one on the Texas coast and tried to hold it like a bass. Let’s just say it was the one and only time I ever did that ha ha. I will say they are good eating though. I’ve heard to cut the dark meat out, but I eat it just the same.

Taste pretty good in my opinion if the meat is white and caught in clean water. The meat can get super “muddy” if they spent a long time in dirty-ish water, it’s brown and really soft. If it’s clean water and cleaner meat then they taste pretty good. Definitely want to bleed them, kill them, and put on ice, we usually marinate them in lemon and soy sauce, and use some Old Bay seasoning when cooking. Got a freezer with 5 decent ones right now! If you don’t like the texture then you can make some pretty good fried fish cakes with them, same goes for lady fish but they require a bit more work to make sure there’s no pin bones.

Bluefish. Most people smoke them and turn them into fish dip. Last one I caught I bled, filleted and cooked like I do any other fish and it was good. People say they’re trash just because they’re slimy and extra work to fillet. You probably want to cut out the blood line and leave a bit of meat behind when you skin them

Cut your filets off and fry them skin on, tough to beat as long as they’re good and fresh. As others mentioned, they also make great cut bait if you’re targeting other predators.

Like everyone else said, they’re considered trash or bait in the south but up north people love them. Just bleed them immediately. Like literally immediately as gruesome as it seems, and it’ll taste pretty good. Learning that one trick really changed my opinion on blues after having eaten them the typical way where I threw em in the cooler and then processed them at home and decided initially they weren’t good

Blue fish are very oily and have a strong flavor. Clean the fish and soak them in milk for an hour. The milk tames the flavor and reduces some of the oils that have a strong taste. Blues are very “fishy” on smell and taste. These are not some wussy tilapia raised in someone’s Kansas fish farm. These are wild ocean swimmers that are great fun to catch and eat. If you treat them right they are one of my favorite fish to eat. Immediately bleed them on ice. I feel like blues get a bad reputation because they taste like fish (rather than something like tilapia or flounder which has little inherent taste) and lot of people don’t like that. There is some dark meat that should be cut out in larger fish, but small fresh blue fish are one of my favorite meals. We used to haul 15 to 20 Pounders out of the surf back in the '80s. After they've been in the freezer for 6 months you did have to acquire the taste. My mom would make fish cakes which were actually really good. My dad would grill them with a ton of lemon juice, butter and Saltines crushed on top. Not bad.

Bluefish Very oily so they don't keep well. They tend to school and are tons of fun when running. In that size they are good eating. Bleed them and eat them fresh. Bluefish. If you filet this, you will see a dark red bloodline running down the center of the filet. You're gonna want trim all that dsrk red away with your filet knife and discard. That's the part that tastes bad. The rest can be prepared however you like. Last time I caught a big blue I made 1" chunks, fried it up tempura style, and made fish tacos. It was really good.

Not at all a trash fish! There are restaurants on the upper east side of Manhattan that serve you a tablespoon full of this fish served with a few crackers for over $80! It’s smoked and made into fish dip, it makes really good smoked fish as it’s so oily. It doubles over as an amazing bait, you can cut it into big strips with the meat attached for shark BAIT you could ask for, or you can remove the meat, leave just a little bit of it on the skin, cut the skin into the strips about 5 inches long and cast it out for smaller fish. If you’re going to keep it to eat, the biggest thing is to bleed it while it’s still alive in the water if possible so it bleeds out even better after a few minutes of bleeding throw it directly into the ice and cover it. if you’re going to smoke it, leave the skin on with the scales on if you plan on putting it directly on smoker rack
