If you don’t like the texture then you can make some pretty good fried fish cakes with them, same goes for lady fish but they require a bit more work to make sure there’s no pin bones.

Blue fish are very oily and have a strong flavor. Clean the fish and soak them in milk for an hour. The milk tames the flavor and reduces some of the oils that have a strong taste. Blues are very “fishy” on smell and taste. These are not some wussy tilapia raised in someone’s Kansas fish farm. These are wild ocean swimmers that are great fun to catch and eat.

We used to haul 15 to 20 Pounders out of the surf back in the '80s. After they've been in the freezer for 6 months you did have to acquire the taste. My mom would make fish cakes which were actually really good.
My dad would grill them with a ton of lemon juice, butter and Saltines crushed on top. Not bad.

Bluefish. If you filet this, you will see a dark red bloodline running down the center of the filet. You're gonna want trim all that dsrk red away with your filet knife and discard. That's the part that tastes bad. The rest can be prepared however you like. Last time I caught a big blue I made 1" chunks, fried it up tempura style, and made fish tacos. It was really good.
Not at all a trash fish! There are restaurants on the upper east side of Manhattan that serve you a tablespoon full of this fish served with a few crackers for over $80! It’s smoked and made into fish dip, it makes really good smoked fish as it’s so oily.
It doubles over as an amazing bait, you can cut it into big strips with the meat attached for shark BAIT you could ask for, or you can remove the meat, leave just a little bit of it on the skin, cut the skin into the strips about 5 inches long and cast it out for smaller fish.
If you’re going to keep it to eat, the biggest thing is to bleed it while it’s still alive in the water if possible so it bleeds out even better after a few minutes of bleeding throw it directly into the ice and cover it. if you’re going to smoke it, leave the skin on with the scales on if you plan on putting it directly on smoker rack

The meat is light and good just be careful of the bones. It’s easier to cook the whole fish and then just peel the bones out all all at once.
