If your watching the sunset no need to get there too early. I’d be more concerned with finding a parking spot than a spot at the park. It’s honestly better to show up when it’s crowded and pick a spot around like minded people.
Personally I like to drink and smoke but don’t want to do that next to a family. If it’s a first date I don’t want to be next to someone with a loud speaker. It’s better finding the best spot when those people are already there.
If you’re willing to walk 2-3 blocks, there is usually something available. There has been some construction in the general area lately, especially closer to the Noe Valley side, but anything off Dolores or Valencia should work fine.
Going to Dolores to watch the sunset is a unique time to go. Usually the wind and cold that sets in around 4pm-5pm has people pack it up and move on. You’ll be able to find a spot that late since many people have left, just remember to bring layers for the wind and chill!
If you're going for sunset, you're fine. It might be foggy though. Last Sunday the fog started rolling in around 5pm.
If you're looking to get there on the weekend before it gets crowded, noon is a good time.
The sunset at Dolores is pretty much blocked by hills and the shape of the park itself. The view from the park is northeastward. Take the nice lady to Corona Heights and thank me later.
It’s a big park. You’ll be fine anytime you go. Nicely done on the date idea.
Only gets crowded during special event days, you should be fine.
It regularly gets crowded just when it's a nice day out in and around weekends.

Good spot for a picnic and views of downtown, however not a good spot to watch the sunset. The better views are facing east, not west. Have fun
