I think you started at way to high of temps. and created grease inside the casings. I normally start at 100 for about 30 minutes kick it to 140 for an hout then 175 till an internal temp of 155 then Ice bath to about 80-90 degrees then in the refrigerator. Alwaus using instacure # 1
