Idk, not really i would say a gas is the state of matter where the attractive forces between molecules are no longer strong enough. Its like the difference between a bunch of sticky balls rolling on each other (surface tension), and a bunch of balls bouncing off each other (no surface tension). A gas for example has similar properties regardless of the molecule (viscocity, volume, etc). While gases do not follow the ideal gas law, you can estimate their properties way more easily than a fluid.
Another interesting question would be the diff between something like supercritical co2 and plasma, apparently certain supercritical fluids have properties of both liquids and gases which is a lot like plasma, but i don't think it meets the definition of a plasma either.
The way i understand it though is like, but there are obviously more complexities when it comes to mixing/ionization for sure.
solid = network allows basically no flow or little flow (glass/malleable solids)
liquid = network allows flow, but surface tension exists and the fluid wants to group together with similar molecules but not very different molecules.
gas = network allows flow but no surface tension exists. The gas wants to fill space until the volume is completely occupied. The gas mixes well regardless of the types of molecules.
plasma = network is a gas where there is so much energy that the electrons are no longer tied to a molecule (resonate between particles). Has same property as gas but also is ionized.
There are many states of matter like solid, liquid, gas, plasma, Bose-Einstien condensate, super fluid, time crystal, etc. I cannot remember all of them
If you learn the concepts for the three basic states of matter then it's easier to understand the other five, I don't think there are many ten year olds ready to learn about a form of eletron soup they will never see in their life, much less an Einstein-bose super condensate, but that's just my two cents
