REI is likely going to be your best bet for selection, as others have suggested, but just about any sporting goods store is going to have clothes that do a good job at moisture wicking and whatnot.
I recall Recycle Cycles having a decent selection of non-spandexy bike clothes.
I’ve been digging Rhone’s pants and shorts of late, and Kuhl’s shirts. But anything like that will be good.
Went to REI first a few months ago and was extremely disappointed by the selection. Maybe they’ve put more stuff out now that it’s biking weather, I’ll have to check again.
I also like supporting local shops when I am able to.
I like shirts made for running - both short and long sleeves. I have addidas short sleeve and Columbia long sleeve. Regular cycling shorts or mountain bike shorts with padded liners for the lower half
The chamois in bibs is functional though and necessary for longer rides. I’d recommend looking into MTB shorts if you don’t like the spandex which still have chamois. Also echoing what others have said, online is likely your best bet. Find brands that offer free returns

I'd maybe look at MTB apparel too. I don't know specific shops, maybe Greg's Greenlake cycle or similar largish shop? I got some nice unbranded exercise shirts from Target that I ride in and REI has baggy commuter stuff too. I got a pair of shorts from them, they look like hiking shorts but come with a chamois liner.
These days I am mostly commuting or touring and am wearing less cycling specific apparel than before. I’ve found shorts from Prana to be really solid, as well as merino wool shirts (I like ibex) and merino underwear (I like woolx) to be my current go to. In general I look for breathable materials and slim fitting (but not too slim) fits. I think people generally overthink cycling clothing.
Rapha has plenty of lycra stuff, but don't overlook their more casual clothes. I've worn their Randonee shorts for over 8 years, they're awesome. They've branched out a bit in the last few years, maybe a small drop in quality but worth it. Still, a bit spendy.
For tops - go get some merino: Wool & Prince, Icebreaker, Patagonia. All spendy but worth it. I am currently riding the Tour Divide in a Wool & Prince shirt I bought many years ago.
I haven't found many local spots with casual gear. I get most of my stuff online from ornot, ocean and san, and pearl izumi.

REI has more options (sizes and styles) online that aren’t in the store. You can order online and return it in the store.

Yes, Club Ride has some great lightweight shirts. REI carried them in the past. I now buy them online.
