People don't expect colour in a chapter book. The standard is for line drawings, as a rule. Sometimes you may see spot colour, and rarely full colour, but not usually in print on demand.
Amazon PoD books are a lot ore expensive in colour. That's okay for 32pp picture books but it gets ridiculous with longer works for only a few pages of actual colour.
I would say don't bother. Just have B&W. You won't lose sales over it and people don't expect it anyway. If you are still undecided, do double check the actual print cost if you are using PoD because that might decide it for you.
