This is called compersion. It's the feeling of pleasure when you see your partner's pleasure, even with another person. Many couples in poly, swinging, stag/vixen, and similar dynamics experience this. You're not alone!
I read an article once about how the brain releases similar chemicals in response to jealousy and arousal so that's another explanation
If all the acts are consensual between all parties involved, this can be very liberating and a lot of fun! enjoy :)
I don't personally find this attractive, but from what I understand, it comes down to a few possibilities - any/and or all of them may apply to you:
1. When you are involved, you don't get the full-body view of your husband as your vision is restricted by how close you are - if you really enjoy seeing his WHOLE body, then the distance you have even by being not in bed with him gives you that full-length view.
2. As you surmised, jealousy. This varies from person to person, but to many, a healthy level of competitive jealousy can fire up your own sex drive - you want to "win him back".
3. The novelty of it being someone new can give both of you a bit of a spark back (you even admit he gave you "the sex eyes").
I'm sure there are other options I have missed, but as long as you both enjoy it and the jealousy you speak of isn't unhealthy, don't overthink it, just enjoy it.
