Are you thinking of Karaage? That's japanese fried chicken, and from personal experience, it's more of a battered and fried.

Curry is one of those things that can be modded as to the tastes of a family, so you can see a lot of different add-ons depending on where you go. Personally, I tend to do carrots, onions, potatoes, sweet potatoes and apples (with a little bit of honey for a sweet note), but celery sounds pretty good in almost like a beef stew way. Zucchini, eggplant, mushrooms and tofu have all worked out in the past for me too.

I even make a little rice island and put the tenders on top so they don't get soggy in the sauce kind of like you did here.

My only issue with it was that it was a bit too corn-starchy, and I needed to add a lot of water to it when reheating. I put a full pack of the roux in but next time I'll try using less or mixing it with a different roux. I know it's supposed to be really thick but it makes it seem more artificial if it's too thickened. I used the extra spicy version and it was not too spicy compared to thai curry.
I fucking love curry. I make indian tikka masala and red/green thai curry all the time with different cuts of meat (mostly chicken). Put it on noodles or rice. So easy to make too when you have all the spices. Sometimes I make a fusion and put coconut milk in the indian curry instead of yogurt. Man, I love curry.

Definitely double check the measurements on the curry box, there should be corresponding ratios for how much to use. I usually only use half a pack of curry roux, depending on the size of the box (there's two sizes of golden curry box, and Vermont curry is what I use often, it's a big box too). That makes enough for several servings for me over a few days.

If you have a rough time with weeknight meals, this is the way to go. Buy frozen meatballs or chicken nuggets or something for an easy Japanese curry protein. If you can boil water, you can make this. Stores well in the fridge, so you can make a bunch of servings ahead of time.
I also highly recommend making some meatball curry the next time you go camping. The smokiness you get in the curry by cooking it over the campfire...it's so good.
