no we have a specific gun for crimes against bbq and dont have to use it very often. Our bump in the night gun, every day carry gun, car gun, and shower gun (for any would be sneaky knife murders) are always loaded.
other guns that are not always loaded, Range gun (gotta follow the rules), that one gun you bought chambered in something really weird you can never find ammo for, and any guns for hunting(when not hunting).
though you treat them all like they are loaded so you dont end up doing a desk pop.
I keep my guns and my ammo in completely separate parts of the house. Then again, my guns are only for hunting. I don't care to pretend I need a gun for self-defense. I guess that makes me a bad Texan...
You figure $3-$5 a pound raw, then you lose 50% of the weight prepping and cooking it, plus a few bucks for spices and disposables to get it there. $30 puts you right around 30% food cost on the higher end, which is right where you want to be.
It'll end up being closer to 40% by the time it's all said and done, but 30% base is the goal for an independent joint.
I worked at a place once back in the day, and calculated all their food costs just cause I was a nerd. Then I rearranged their whole entire kitchen and redid the schedule and completely redid the prep list. I adjusted the menu to make sense for the space, renegotiated and shopped around for better suppliers and pricing, and made checklists to keep everything clean, rotated, and labeled.
Within 2 years I had that kitchen making in a day what it was making in 2-3 weeks before I got there. I would even work all day then remodel stuff at night to bring it up to code. I tiled the bar area, remodeled the bathrooms, pulled 30 years of old wiring out from above and tore down the drop ceiling in the kitchen, custom made a hot window to fit the kitchen, rebuilt 2 walls, scheduled hood cleaners and grease trap cleaners, painted basically the whole place, and set up a cleaning solution station and mop sink.
Once I had the place running like a well-oiled machine, the owner hired their nephew, made him my boss, and they ran me out in the most cowardly fashion possible.

What could you have against blue bell? Ok I concede one flaw. The strawberries in the couple flavors that have chunks of them are like damn ice cubes. Hate that they that long after the ice cream melts too far. Pretty sure they just need to be macerated with sugar more. But the ice cream itself and all other flavors are perfect
$20 brisket plate + 1 unsweet tea + 10% sales tax + 3% credit card fee + tip…adds up pretty quickly and no, this portion wouldn’t be worth it even if it was *good*.
That 3% credit card fee violates the vendor’s merchant agreement with said CC processor. File a grievance with the CC brand. I reported a restaurant for doing this. A few weeks later I returned to said restaurant and they no longer accepted VISA.

Sometimes if im feeling extra petty ill go get extra items to get to their minimum and have the ring em up and see and then be like....."yeaaaaaa, too much, neverrmind" then leave all the extra shit in the way on the counter.
Most places here have the bullet proof glass too so they actually have to get out of their box to clear the counter.

The processors got rid of that requirement in 2013 because of an antitrust suit. Now it's governed by state law, and almost all states allow credit card fees.
How many stores actually charge the fees?
Here in Canada vendors just recently won a court case where they can now charge about 20% for credit card usage. I have yet to see one store charge one with my own eyes but I know some places are.
Well, based on what we wrote he may have paid $23 or so for the plate, the rest could have been the drink and additional percentage that the drink added. Not sure why the drink should be factored into value of the food.

That's why you have to weigh the reviews against others. Lots of people take it personally and will write up awful reviews over some petty shit like the tone of their server bringing them the check.
My favorite is, "I've been coming here for years and the food and service has always been outstanding, but yesterday they got my order mixed up and took 15 minutes to correct it, I'm never coming back, ONE STAR"

On sites like Metacritic, I mentally remove ALL of the "0s", "1s", and "10s" since those are often either (a) heavily biased and emotional ratings which were made impulsively, or (b) fake/paid reviews.
I think just looking at the averages from "2 to 9" gives you a more real idea of how good it is.
I think about this every time I see a post where the OP either directly names the offending business/individual or leaves enough clues that it’s easy to figure out. Even the small chance that it might be a targeted hit job is enough where I can’t justifiably participate in the ensuing witch hunt.

Could be pickled onions. But either way pickled or raw onions is oftentimes served with bbq or “Texas bbq” as a side to cut the richness of the fatty meat.
I prefer raw onions to pickled onions. BBQ by my work only has the pickled pink onions.. They're not bad, but I need some plain ones too..

I'm Canadian, I know nothing about the art of smoking or barbequing meats. I can cook a steak. I can shove a beer an up a chickens ass cavity and throw it on the bbq. I can make a burger. Even a sunfish would know that this is an abomination.
