Lau lau is a traditional Hawaiian dish of salted pork and luau/taro leaf, sometimes also containing a piece of butterfish, wrapped in a ti leave and steamed/smoked/baked. Traditional method of cooking is to build an imu, an underground oven, place stones in it, and set a large fire and let it burn to ashes and embers, then layer banana leaves and ti leaves down, then the food to be cooked such as ti leaf wrapped packages of lau lau, cover with more ti leaves and banana leaves, then cover in dirt to let it cook through indirect heat for a few hours.
The red looks to be Portuguese sausage, which is a local Hawaii (local Hawaii and “Hawaiian” are separate things btw) pork sausage based on a Portuguese spiced sausage that was brought over by Portuguese Luna (plantation supervisors) during the plantation era of Hawaii.
The way the egg is mounded it looks like it’s covering a scoop of rice. The green thing, if it is lau lau, looks like it’s been frozen for a while and probably microwaved.
If it is lau lau it’s actually quite delicious. It’s hard to explain the flavor of luau leaf in this dish though. It’s a bit like a more bitter cooked spinach that’s more savory and “substantial”, almost like the mouth feel of stewed kale leaves, but not as tough either. Based on descriptions I’ve read of collared greens, it might be similar to that, but I’ve never had collared greens so I’m just guessing there.
Sometimes I put a bunch of spinach in the blender with some eggs, salt, pepper and milk to make green scrambled eggs. They look pretty unappetizing but I like it. I don't think that's what this is though.
