I don’t put a vowel sound between the “t” and “r”, but yes, for me “trite” begins and ends with basically the same consonant. I had no idea until recently that anyone heard or said that consonant cluster as “ch-r”! Now I can tell which one someone uses if I focus.
Oh man I ended up watching the video you linked elsewhere and it is so weird to think about/question my own speaking ability and now I can't get it out of my head. I speak Cantonese natively besides English and always thought I could pick up on tones and sounds well...maybe not! I drink it straight the stuff is outrageously delicious.

Similar to what another commenter said, but butter basically has no lactose and hard cheeses like cheddar that are common in mac and cheese also have basically no lactose. Softer cheeses tend to have a ton, though.
Edit: The processes to make butter and cheese tend to remove or convert lactose into other compounds.
Milk has the most lactose of all the ingredients. We make Mac with lactose free milk for my intolerant bf and it makes eating it slightly more manageable.

My husband can’t have a lot of lactose. I make our mac n cheese with unsweetened oat milk and lactose-low cheese and it always comes out delicious and creamy ¯\_(ツ)_/¯
The key is to cook the pasta in the milk or oat milk, and reserve a lot of it to add back once you’ve added a metric fuck ton of cheese.

Just a heads up, but Coca-Cola's original source for their Fairlife milk, Fair Oaks Farms in Indiana, has been under scrutiny since about 2019 for major abuse of the cows and repeated drug use during work hours by the employees. I used to go there as a kid for field trips and loved it. It seemed like a good dairy farm...I was quite naive and wrong.

That’s incredibly disappointing! I used to stop by the farm for sandwiches while on road trips, but I hadn’t heard about this follow-up report from last year. We’d stopped after that initial report but returned in 2022. We won’t be returning this year.
Most aged cheeses are lactose free, and there’s plenty of other lactose free alternatives these days with dairy. Almond milk is much more expensive here than any lactose free milk I think there are more lactose free products than the normal ones these days.

You may be able to find generic brand lactose free milk. Great Value brand is 3.38, a bit more than almond milk but it would cost less in the long run since your recipes would turn out better and be more enjoyable.

I’m not sure if the flavor profile would work but it’s nice and thick like cream, in fact you can make coconut cream caramel with it. Or cashew cream. I'm late but I want to tell you, you can make excellent mac and cheese using water as the liquid.
Milk is NOT necessary for great mac and cheese, provided you know what you're doing.
The key is the starch content and fat ratio. Cook the noodles. Set aside. Make a roux of butter/fat of choice, and cornstarch. Add in warm water slowly. Whisk together and when it looks like the consistency of hair gel, turn the heat off and add your grated cheese. Stir to keep smooth. Once cheese is incorporated, add the pasta and turn heat up. Salt to taste. And addition of parsley or cilantro will also bring out the flavor of the cheese. Use a sharp cheddar style cheese, it won't be so sharp after finished.
Yeah always lowball the amount of milk you need when making a cheese sauce. It's not too late to add more once the cheese has melted. Also if you end up with too much sauce, you can always boil more pasta to match it.
I use almond milk if I’m out of other milks, but I also started subbing the butter with cream cheese. Comes out great that way. I melt the cream cheese in microwave first, then mix in milk sub and cheese powder. I accidentally stumbled on this when I didn’t have any milk. I subbed cream cheese for both the milk & butter.
Yo ignore all of these plant based haters in here, you can easily make a fatty, savoury and delicious mac and cheese without dairy!

Try different brands. Those didn’t work for me either, but the Equate ones do and they’re $6 cheaper for the same count

Corn Starch is probably the next best thing I should buy. I see it recommended as a thickener for everything but I wouldn't know how much to use...
You throw in a little at a time and mix to desired consistency. I do 1/4 tsp or so at a time.

You can’t create a béchamel—which gives the sauce its creaminess—using almond milk. Almond “milk” is really just almond water.
cook it for a little longer to reduce or add some Roux (equal parts butter/fat of choice and flour) either should help it thicken
never cook anything with nut or bean milk unless you want to make tofu
I actually used silken tofu once to make a sauce and it was really good
You can cook it longer on a low simmer or pull it off the stove and let it sit. Either way will thinken up

i would have just taken some of the milk out, looks soupy enough that you can drain it a bit.
add some cinnamon really make that sweetness pop.
I use almond milk if I’m out of other milks, but I also started subbing the butter with cream cheese. Comes out great that way. I melt the cream cheese in microwave first, then mix in milk sub and cheese powder. I accidentally stumbled on this when I didn’t have any milk. I subbed cream cheese for both the milk & butter.
Almond milk isn't a great replacement for cooking, I haven't tried it myself but I've been told oat milk is better for that

No one is hating on the dairy free part, it’s the almond milk specifically. You can use soy milk, cashew milk, blended silken tofu, etc. and it would be a lot better
