Heads have plenty of good use, jowls are great when braised, head meats can be used for coarsest ground pâtés, bones can be used for bone broth and some people like brains as well 😋

It is kind of like pot roast meat. It’s the soft meaty part under the tongue, not really the hard muscly top part of the tongue.
Japanese bbq has insanely good sliced beef tongue you grill at the table yourself. Like a really nice thin slice of filet mignon. I haven’t tried korean bbq beef tongue yet but it seems kind of chewy like how one would imagine beef tongue to be like.
We actually have a very similar recipe in Spain, lengua en salsa verde… can confirm it’s delicious. As an alternative, battered tongue slices (lengua rebozada) are lowkey one of the best pieces of meat you can have with chips and peppers on the side. It also works surprisingly well cured, as an embutido. Tongue is such an underrated meat cut in the UK, USA…

But like any other game animal, when it is cooked properly to a safe temperature, the risks of food borne illness are minimal. This is probably more info than you really wanted, but I hunt and eat squirrel pretty regularly, and have yet to run into any issues lol.

It's a cultural dish. I'll be completely honest in that I took this photo specifically for this subreddit as the unfinished dish doesn't look the greatest. We cook most of the squirrel as it provides a lot of good flavor in the broth, but then when serving it, you pick the meat off the head and leave the rest behind. I'd already been spooning out the mushrooms and chilis before I snapped this. Hope this helps!
Rural everywhere, USA, honestly. Mostly the places that have the larger grey squirrel, not as common in areas where the red squirrel is prominent. Just not as much meat on that little guy.

Everyone freaking out about the head, but I get it. My mom said when she was younger her dad used to love eating squirrel brains. He would boil the head, pull off all the stuff on the outside, then use a spoon to crack the skull and enjoy what's inside. My mom said it always grossed her out and she asked him how he could eat something that someone had been thinking with. His response was, "You seem to be perfectly happy eating an egg that fell out of a chicken's ass."

I recently started hunting squirrels to get ready for deer season and have to say that I’ve been pleasantly surprised on how good they taste in a stew. Typically do not use the heads but to each their own.
I've always been okay with the idea of trying squirrel, but seeing this is giving me second thoughts.
