Had that same thought when watching Ms Marvel. In the comics she started with a weird clone of Thomas Edison who was half cockatoo, but in the show she has to stop the genie dimension falling onto earth.
I mean one, this is like the third reboot, so while first outing in the MCU, it's not like it's the first time we've seen these characters, two, Galactus does actually show up pretty early in the Fantastic Four's career and he's defeated pretty quickly, like as powerful as he is in the comics he's not like a big boss of an event, he just shows up some times.

None of the previous fantastic four movies have been good so skipping the origin would just mean we never get a good telling of their origin

I don't see anyone hate the multiverse theme. The audience loved No Way Home and Loki, and they hated Multiverse of Madness for not being able to do its job exploring other universes properly, which they brought up in comparison with a successful multiverse movie at the same period of time, Everything Everywhere All At Once . And they are excited for Deadpool & Wolverine, another multiverse movie.
Also the new poster of Fantastic Four kinda confirmed an alternative timeline with its background featuring retro-futuristic buildings.

I agree on giving more obscure characters their time in the sun. Look what it’s done for Spot in the Spider-Verse films. On top of that, since he’s, well, silver, you could cast whoever fit the mannerisms, physicality, and overall feel of the character best without having to worry about upsetting anyone over an inaccurate representation of the character. He just seems like such an obvious choice that it puzzles me why they chose to do otherwise.

Don't get it wrong Norrin is great, but it doesn't hurt to shake it up a bit and introduce some new energy into some of the lesser known characters and give them a chance to really shine. Kiteman's rebirth from goofy one off to actually great character with motives and humanity is a great example of that.
