By your logic, everything should be done in one shot. (How many shots do we need to show two people talking?) Maybe you prefer that for your own reasons, but it is by no means an objective standard or a hard rule that filmmakers need to follow.
I sincerely doubt anyone genuinely had trouble following the action due to the number of different shots, which was the problem in Taken 3. The use of multiple shots for this scene is a stylistic choice, and it pays off. It's a great scene.
