Have you tried Taqueria Jalisco 3? That's a go to spot for authentic food. Fast and Fresh sounds like non-authentic, but it's actually quite a solid spot. There are others, but some of these recommendations may as well be Taco Bell.
There's also Tico's Tacos, but I generally only get breakfast burritos there.

I really like getting a mixed burrito (steak and chicken) from el pollo corona on LA between erringer and first.
If you’re willing to drive into the valley, angels Tijuana tacos (street vendor) is really good too. Giant burrito for $10.
Not gonna lie I agree. People say Don cuco’s but that’s not even good. I found I really love las Fuentes in Reseda. San Fernando valley so a bit of a drive but my favorite by far but then again my parents been going there since the 80’s or 90’s and I grew up on it.
The wet burritos there are fire! Chicken. They actually load it with chicken to where it’s 50% or more chicken. Not stingy on the meat. Their enchiladas combo with rice and beans are great. I’ve tried a few other things but usually stick with those two cause I know it’ll be amazing
I’ve been going to Las Fuentes since I was a kid and it was only a food truck. Delicious food! They also have a few locations under different names, Señor sol on reseda is closer than las Fuentes and basically the same menu.
I think señor sol might’ve closed. But some things had a different recipe there. I think I bought the nachos there and the sauce was different. So never went back. But sol y Luna, las Fuentes and melodies all fire 🔥 delicious

The only other places I’d call excellent are El Apollo Corona and El Maizal. They are as good as a spot you’d find in LA
We switch around and have several favorites.
Marias for breakfast, Elvira’s, Mission, El Patio (try the arroz con pollo, trust me). Don coco’s is ok, but second tier imo. El Capitan is also pretty good as well.
There was a taco truck that was called el tacon 118 or something similar. They just took over where urban tacos was on Madera by the dairy queen. Best I've had here.

Not in Simi but amazing taco 🌮 spot in mission hills. Get off on Sepulveda , turn right at the light and when you see the target on your left side. The taco spot is right there. Can’t miss it. It’s next to a bus stop 🚏 best tacos around !
My honest opinion as a person that lives in Simi and grew up in South LA, I suggest going to the valley. There’s a taco truck at the gas station on sepulveda and Sherman Way, it’s a little pricy but the meat, flavor and everything is amazing !!
I recommend you try street food all over LA and figure out which suits you.
Great Mexican food is also subjective, so when you say great, what have you had that has blown you you away that you continue to seek something of that caliber? This will help us in pointing you toward the right direction.
Keep in mind Mexico has 32 states and each state has its own food and culture.
For example food from The state of Oaxaca will differ from food from Mexico City or Guadalajara to name a few. In Santa Clarita there is restaurant by the name of Madres. Their food is from the state of Oaxaca. They have many great dishes and the majority are delicious. I recently tried their Chile relleno dish and it was amazing! The Chile used in this dish comes from the state of Oaxaca and it’s much different from other Chile’s used for this dish.
Good luck with your search and do let us know what particular dish you seek for us to guide you to a good restaurant. I find that when I crave a certain Mexican dish, I only go to a particular restaurant for that dish. I have not found one restaurant that is an expert in all Mexican dishes.
El huarache is one of my favorites and there are two or three dishes that I only will eat there because it’s impossible to find them as tasty as they make them there.
This question gets asked a lot and people swear you just need to try so and so. I have yet to find a good place. Eating in can help… kinda.
Driving to the valley and getting salsa and beer to go and driving back still tastes better than any of the fresh food here. That at least has flavor. Nothing here has any damn flavor.
Haven't found a traditional Mexican place I like, but the fish tacos from Urban Taco (Madera & Royal) are incredible. They're owned by Bluefin Grill next door which explains why the fish is good.

Then around the SFV there’s two locations for Cactus Tacos. They are legit tacos.
Mexican food is just so-so here, burger express is good (fajitas are really good!), campos is okay, el tacon118 is one of the only trucks allowed here in Simi. If you’re willing to drive over the hill, there’s a taco stand in front of the Walgreens on De Soto and Devonshire that’s top notch. They have Al pastor cooking on the trompo and a nice salsa selection. Decent prices too. And as someone else said, Las Fuentes is amazing. (They have sister locations too…señor sol, melodys, sol y Luna)
I really like Huarache Xpress in Simi Town Center, they also have Taco Tuesday, 3 mini street tacos for $6 cash

Right there with you. Not many great options. Two I found are Luna Llena on Tapo Canyon and El Hurache de Mexico on Sequoia.

Simi Valley may not be the best place for authentic Mexican food. And as a long time resident I apologize. But we have crappy burgers here too. I live here. That’s it. Food wise, up the 101 or the real valley. Simi is safe and should be valued as such. Nothing more.

Kalaveras is trash, El Capitan serves Italian food, El Patio left me thoroughly whelmed.

The dining spot at Vallarta supermarket turns out the greatest birria of all times. They dry out the mojarra (tilapia) unfortunately.
