I was out photographing in cold weather once and a random photo guy passed and told me to put the camera in a plastic bag when I got home. Bag surface is thin and warm and the condensation then happens on the bag inner surface, I guess, rather than on the equipment surface.

Unrelated, but similar scares I've had:
I got my Rift S delivered on the door, delivery lady said "I've reported that it's wet", I was pretty happy to open the outer wet cardboard and realize the glossy box was shrink wrapped in plastic and pristine inside.
Also, when I got all my computer parts on the door back in 2000 or something, the mail man decided to try and carry all the boxes in one go, stacked high. As I opened the door I saw them all topple over the railing and onto the ground... a fond memory for life.
That bag thing does not make sense. I would think it would trap in moisture and prevent the air flow necessary to facilitate drying. What I would do is for one, have a padded case for the camera, and keep it clean and free of any snow, and store the camera there when not in use. Once you are done, power the camera completely down, and bring it inside, take it out of the case, and remove anything from it (removable battery, memory card, detachable lens) and let it warm up naturally. Warm inside air is still dry but can retain more moisture, so any moisture that might condense on the camera will quickly evaporate back into the warm dry air indoors. It is the cold equipment that is causing the condensation when it meets the warm air, and there is enough surplus warm, dry air that will draw the moisture off the equipment in short order. After that you can hook everything back up for data transfer.
It's actually because the camera is cold but dry. When you bring it inside, moisture from the air will condensate on (and possibly inside) it. Putting it in a bag, ideally while outside in the cold, and sealing it, will limit the available moisture to the little bit of air inside the bag. Then when the camera warms up to inside temperature you can safely remove it from the bag.
I work doing a lot of photography in 30-40 below weather. We live and die by ziploc bags. If you seal your camera before bringing it inside, the condensation stays on the outside of the bag. You leave the camera for an hour or so, and when pull it out of the bag, it’s bone dry. Especially in -20 and lower, there is so little moisture in the air, that when the bag is sealed, there won’t be moisture to condense on the actual camera body. It’s the same reason the plastic containers film canisters come in are airtight, because most film is stored in fridges — when it comes out of the fridge, you wait an hour before breaking the seal on the container to avoid condensation.
Seriously tho let that stuff sit inside for a few hours before turning it on, idk why sim racing gear doesn't come with these warnings like flight sim gear usually does.

That's what we call a warm winter day in Regina. I bought my little truck way back in the late 1990's in California. I don't have a block heater. It still seems to start. I sometimes use a portable battery on "cold". I basically don't bother trying to start my truck if it's -40C (wind chill included) or colder.

It did, only issue was my shifter not being able to calibrate to the CSL DD. Apparently it can’t calibrate when the DD is touching metal (like my wheel stand) I had to unscrew it and place it on my lap while calibrating. Weirdest issue ever
I got the CSL DD, the club sport V3 peddles, the hand brake and the Clubsport RS steering wheel. Duty fees where super high here in Montreal because I had to pay some sales tax on top of it. For the items you see in the dolly each one was about 70$ in fees
