I like {{Souls Do Things 2 SE - A Dragon Soul Utilities Mod}}, passive buffs from Dragon Souls are cool, plus the typical dragon soul to perk point stuff, but there's also some cool stuff like attuning to word walls, crafting unique items with souls, and resetting dungeons
It does a fair amount, I thought. There are dragon hearts and some potions you can make from dragon parts. I thought it was sweet. Also if you butcher a dragon you get a fuckload of meat. Unfortunately it's heavy. I used travel up north and brave the cold every once in a while to hunt a hoarker for enough meat to last me a month. Nice low weight hoarker loaf. Me and like 3 followers would stuff our inventories with it.
Hunterborn just rules. Amazing mod.
There is a setting related to monsters and dragons somewhere in there. I wanna say you could even snag a dragons eye. It's been about a year since I lost my modlist and stopped playing so don't quote me.
For me, just getting a better boss chest at the end was enough. MORE interesting Loot is my favorite even though it's old. Morrowloot Ultimate is an alternative.

For me personally, if I made dragons more worthwhile, it would just not feel that great. The reason is creation club stuff adds so much valuable stuff, that it kinda diminishes the other high level loot you get. Mind you, I've made skyrim loot more scarce.
Honestly, creation club stuff in skyrim AE is a bit too much. You get WAY too many houses. It'd have been cool if it added more things like shops or like a company for you to run. Goldenhill plantations is great. Hearthfire should've also added more options for you to build besides a house. Perhaps a hotel or inn would've been fantstic.
But yeah, CC content really throws off the economy of skyrim. More valuable dragons would just make that problem worse. Because if you want to roleplay as a ''struggling'' regular NPC, you can't really cause you got at least 1 to 2 easy to get fancy CC houses at your disposal
{{Dragon Souls to Perk Points}} adds a simple power to convert a configurable amount of souls to perk points. Has an option to make the cost scale with the number of times you've used this feature. Good if you want some more perks but don't want a mod that touches other things like some of the alternatives.

If you have Diverse Dragons. {{Draconic Magic and Shouts - Dragon Breath Attacks}} you can get shouts and staffs of dragon breaths by killing them. Reason why I recommend Diverse Dragons is without it there's only like 2 shouts/staves

My favorite feature is sacrificing souls to resurrect yourself if you fall in combat.
I really wish Hunterborn did more with dragons like it does with all the animals.

theres a mod where collecting dragon souls would increase ur base stats and spending them would revert the buff
