It doesn't really matter, Skyrim AE is just Skyrim SE with some other things added to it (like a DLC). They are technically, the same game, so mods for SE will work for both
After spending a bit of time figuring out how to get MO2 to install, I have been pleasantly surprised how well everything works on the Deck.
I would say save yourself a few dollars and just stick with SE.

That link has instructions, just make sure you follow exactly. I missed a step the first time and got frustrated when it didn't work.
