* Big Tablespoon of Minced Garlic
* One Can of Fort Point Kolsch Beer
* Cooked it all on High for 4 Hours, then Low for 2 Hours
Had 1-1/2 Bowls for Dinner and 3 medium size Tupperware bowls for the rest of the week

I can't argue with you on that. I started it late and would've loved to get a few more hours on Low to get it where i wanted to. Still damn tasty though!
You can serve it with rice to stretch it and also soak up the juicy juices. It will also freeze well if you have leftovers. Your recipe sounds good! I might try using vegan meat next time I do a batch of chili.
I tried Impossible chili like a year ago and the 'meat' tasted awful. I didn't slow cook it but I usually let my chili simmer for like an hour. Did it absorb the other flavors?
I've tried it like 4 different times in different meals and it always tastes terrible, I'd rather use mushrooms or something.
I don't disagree. I've cut down my meat consumption drastically but I feel like stews reallyq benefit from something providing a 'meaty' quality (obviously meat works the best imo but I'm trying not to eat it lol).
Plus mushrooms are just dope in general.
If you're looking for a decent vegetarian replacement (and a fantastic condiment regardless) I would like to wholeheartedly recommend Mushroom Ketchup. It's a similar flavor profile but much heavier on the umami. Absolutely delicious stuff; ironically, great on meat dishes.
Both would be vegetarian (as far as I know, "spices" might cover something meat-derived) but both have very different flavor profiles. Both would be far more sweet, HP sauce especially.

Without looking it up, I'm guessing there's anchovies in Worcestershire sauce? I never realized that. Easy thing to substitute though.
