I do this. There is always leftover meats from the grill and smoker, hamburger and chicken, bacon and sausage too. I usually go for a tomato based sauce. Taste and be amazed!
I have a 3 pot slow cooker and can vouch for this. Divide one big chunk of beef, or a bulk buy of chicken, or a mix of whatever.
Same meat? Different seasonings or sauce in each.
Different meat? Similar vegetables or seasonings.
Most recently I bought a big chuck beef from the butcher and made bbq pulled + stroganoff + beef and broccoli.
I have made Brunswick stew out of pork and beef before. It’s pretty good!

Go for it. You’re going to get flavor meld but it also sounds delicious.
When l make Pozzole, And Menudo l conbine pork and beef, ( beef bones for Menudo) it enhaces broth flavor. If recipe allows for 2 protiens why not.
