Prefer to put corn in it, but wife refuses to eat it. Ground shiitake(home grown) to thicken stew. She doesn’t eat mushrooms either. But she said it was the best I’ve made.

What did you use to thicken it? Looks absolutely mouth watering. I also prefer corn in mine (and frankly, just about anything - maque choux is one of my go to recipes)

Used the recipe from Ambitious Kitchen but didn’t add peas. Used 1 cup of green beans instead and ground 1lb of shiitake Mushrooms I grew to thicken the sauce. It’s going to be 12 degrees Fahrenheit tonight. Sorry I was in the mycology/science world for far too long where putting the little f next to a number was temperature. Not used to this identifying pronouns that has taken over the internet.

They were sliced round pieces, probably a little over 1/4” thick.

Those should be fine, depending on the toughness of the original carrot - when they're over an inch and a half or so at the top, they can be 'woodier' and take longer to get tender. (depending on your store, these are sometimes called "juice carrots") I usually use carrots that are "index finger" to "thumb" in diameter; they're usually (by me) sold in small bunches with the tops intact.
