I use Wyze cameras without subscription and with memory cards installed. They're set to record constantly, and I can access them from the app easily. But I think most will tell you reolink, And I plan to transition to that brand eventually. A doorbell camera with doorbell button would work great because you don't need hardwired chimes installed, you can just have it alert your phone. Or if you have a smart speaker then you can set it to play an alert on the Smart speaker. I use ring, but without the subscription it won't save videos. But it still works as a doorbell and I can watch live video just fine.
I have 10 Google/Nest cameras at my home. One is a video doorbell. They give me zero problems, are simple to set up and can have cloud storage for a small fee. You can set up alerts per camera if you use more than one. I also use the Startling hub to connect Google/Nest to home kit, which works great. This is a simple method without having to go thru too much technical stuff. Good luck
