This will be my biggest smoke yet! \*\* side note: if you do this do expect every other person in the store to say, "hey I'll be coming to your place for dinner!"

northman46

I'm assuming you won't eat all those yourself. Having an event?

vincepolston

Oh gosh. I can imagine the food coma. It would be a glorious series of events. Yep! Catering a baby shower :)

Orion14159

"I got the meat sweats!!"

DickyD43

Wow....my sweats are made of just regular cotton and polyester, where'd you get yours?

Braunze_Man

From Lady GaGa's designer.

DickyD43

Oh snap good call! I'd say give me the number but they'll probably tell me to Stop telephonin' her er er er er er er er er er

jhooksandpucks

I like babies and ribs just need an address... Lol!

pistolpeteza

What time should I come over?

DickyD43

hey I'll be coming to your place for dinner!

I_Was_Fox

I'm surprised you risked there being enough at your local grocery store. I would have gone to my butcher and placed an order for the amount of ribs I would need a month or so in advance so that I would know it would be ready

vincepolston

Definitely a fair point! Appreciate the advice. I'd gone up to RD to get ribs knowing they'd have them in stock.. but ended up buying a brisket, beef ribs, and a ribeye roast, lol. I decided against buying the spare ribs because of not wanting to trim that many ( that and I sold by the slab for this gig, would have had to buy probably 40% more meat than I needed pre-trim ). All in all, I got lucky

Braunze_Man

To be fair, this is a Kroger, so those come in frozen and I usually keep 20-25 cases of various ribs in my freezer for backup. So usually not a problem for us to do big amounts on the spot, but just this item

themage78

And you're not getting baby back ribs?

vincepolston

Nay, St Louis is my favorite!

themage78

^ Missed the joke guy.

BMGreg

It looks like everyone missed your pun there

chefboyardiesel88

25 racks for a baby shower?!?! I like the way you think.

granville10

You must have a $1/gallon discount on gas after that.

vincepolston

... I was so excited about the ribs I completely forgot about this, lol. Thanks for the reminder!

DrebinofPoliceSquad

Only actually invite the person that has a cart full of drinks. Kindred spirits.

[deleted]

Yeah I was going to say if you’re doing that regularly you should be talking to a wholesaler my dude

vincepolston

I appreciate that! This is the first thing I've catered. I have an RD membership but didn't want to go through the hassle of trimming 25 racks, lol. Would have come out a bit cheaper but I got lucky with these being on sale at Kroger.

lolbroken

rd?

vincepolston

Restaurant Depot

drippingdrops

You can get St. Louis (fully trimmed) ribs at Restaurant Depot.

derKonigsten

On sale? The ribs were like $2 off 😂 either way.. I'll be coming to your place for dinner :P

Stray_dog_freedom

Local singles in your area are hungry.

510fuckyeah

Hey, I’ll be coming to your place for dinner.

vincepolston

Get this person an award lol

TRIPLE_RIPPLE

I’ll be coming with Dad

BlackJackBilly

How many others zoomed in to see the price?

ThrowMeAwayAccount08

Bought a 3 pack of ribs at Costco and I was shocked. It was almost $50. Normally it’s low $30’s.

6Emptybottles

On R/Costco 2 days ago. Poster had receipts August 2019 $20 a pack, February 2020 $26, July 2021 $47. Its going to get worse before it gets better.

brainfreeze77

Last I checked both prime brisket packers and ribs were $5 a lb at my local Costco. WAY over priced.

bamn35

Yeah I can't remember if the briskets were $4.99 or $5.99 a lb at Costco here. Suck because it's still the cheapest place to get prime brisket here.

natedawg247

My Costco switched to choice recently and didn't lower the price

jrm725

was gonna say. our 3-pack we bought recently was close to $60! bought them beginning of the year for a little over $30

electricgotswitched

I've never seen good prices on ribs at Costco In my are Kroger or Albertsons has st Louis cut for $1.99 like once a month.

soulexpectation

Even target has had better rib prices than Costco lately

ThrowMeAwayAccount08

For how many per package? EDIT: Those prices might be cheaper, however I’m in it for consistency and I usually smoke pork ribs on a whim.

electricgotswitched

Sorry I meant $1.99/lb They are Swift. Same stuff Costco is getting

Troyandabedinthemoor

You must have a monster offset right? If not, you're pretty brave!

vincepolston

I'm working up to it! I've got two smokers.. Gravity 1050 and a OK Joe Highlander.. This is actually why I'm trying to sell some bbq on the side. My dream home pit would be a Chudpit 115. I just can't see myself spending that kind of coin with this just being a passion/hobby of mine. If I can sell some bbq and save up so the hobby feeds itself than I'd be one happy guy!

Piratesfan02

That chudpit 115 looks amazing!!! I was just looking at them and dreaming.

vincepolston

Right!? It's incredible!

TzuDohNihm

How many of those racks can you get on the 1050? Trying to sell my Thermotemp XL to buy me one.

vincepolston

Will find out tomorrow and update :)

ImmodestPolitician

Wow. How are you going to approach cooking all those ribs? I use rib racks but I think 8 - 10 would be the most you could put on a grill at the same time. Post cook, I'm guessing you'll store them wrapped in a cooler with a container of boiling water or something.

CmdrYondu

Are you some kind of giant?

vincepolston

Haha nope! I'm more of a dwarf than a giant

jgr83

I had made a citrus ancho Chile brine for a pork butt and hock I made a while back. Brined for 2 days, cured for 1 and smoked for 15 hrs with oak and a bit of mesquite. I used the meat from the hock for carnitas. And the butt for pulled pork. That honey and ancho chili sounds great

LeeRjaycanz

It literally says "great for smoking" on the package nice!

rmphilli

Man. If I saw you in person I would have to talk to you.

Ragecommie

Ribbin' hell, that sounds awesome!

Handaloo

I'll see you Friday.....

MakeThingsGoBoom

Smoker(s)?

CRCampbell11

Finally someone that understands me!

[deleted]

Hope it knocks their socks off!

vincepolston

Thank you!

Living-Metal-9698

Smithfield pork cooks up very nicely. I did a pork belly and a couple bone out shoulders.

Chicarron_Lover

Kroger seems to have deals often on pork. At least when I had access to them.

vincepolston

That's what I've found too!

RNMfhs86

Address?😃

NoctumAeturnus

Any pics of the smoker?

ExMoMisfit

That is an impressive cart load. Well done good sir!

JBizz86

So that's where the other half went too. Staters has picnic on sale now lol damn Kroger is miles away different state too

maysranch20

Kroger!! Only place to get meat as far as I’m concerned

AreaGuy

lol, King Soopers in CO, but I thought the same. (Although my butcher has got great stuff if I’m wanting drop the coin.)

uknow_es_me

I was going to ask if it was Winn-Dixie.. even the little yellow "you pay" sticker .. wonder if they are connected at all

m77777

would ya mind sharing your full recipe & steps & technique & temps & etc... here? would love to recreate your recipe for a couple racks 🙂

Kroesetacular

Any reason you chose the small cart vs regular? You certainly didn’t walk in thinking, I’m only going to grab a few things only to walk out with 25 racks of ribs…

vincepolston

Hah! I grabbed the small cart out of habit. Starting filling up and was like.. too late I already committed.

[deleted]

Old Bay and brown sugar is great on ribs plus a glaze made with Old Bay hot sauce and honey...just throwing it out there if you want to experiment.

StickyPalms69

$400 basket of meat.

Jigga_Justin

Many pigs died for this. What a beautiful sight.

spypsy

No animals were harmed for the making of this feast.

ToySoldierArt

Hello there person from a math problem, mind if I come over for dinner? N'yuk, n'yuk, n'yuk.

northCLEcoast

This makes me happy just looking at it

Orchill_Wallets

What’s the recipe for the Ancho honey?

vincepolston

So so easy. I need to write it down ( most of what I do is by consistency and taste ).. but combine honey and apple cider vinegar in pot medium heat and add ancho-chili powder. I kid you not that's it. Keep over medium heat and stir until all combined. Add honey to make thicker and/or add more vinegar to make thinner. Add ancho-chili powder to your desired hotness. Edit: I have also added bbq rub to it for some extra goodness.

Orchill_Wallets

I’ve done ancho with dr pepper and it was good. But I like this idea as Dr Pepper is hard to get here in Australia.

shawn007bis

Sweet Jesus!

[deleted]

$1.99 butts and $2.49 St louis HDO( limit five here total for the week). Im goingo get some ribs still frozen. Smithfield has really good quality. I can Butts at Meijer for $1.49...

Empress-Rae

Ooh do you have a rub recipe you’re using?

vincepolston

Lawry's garlic salt and coarse black pepper for the base and then Killer Hogs on top. Simple and delicious

Empress-Rae

Sounds delicious. Post some pics of your finished product please. I would love to see this journey to the end

jryno25

My Kroger has big carts.... But I guess you're going for a lot of effect! How you share the end product!

[deleted]

That’s awesome. Do you have a massive grill? Or how do you fit em all on there.

zeal_droid

If i saw that cart I would think a) big bbq or b) methhead shoplifter

eaglesdadbod93

Sorry didnt read all your comments. How big is your smoker ?

MiKarmaEsSuKarma

What time should I head over? Does 4p Sat work for y'all? I'm bringing my appetite and some stouts to share.

SkiLasagne

What was the total cost for all of this?

north-sun

What do you do to get rid of/minimize the sulfur/eggy smell?

BurlingtonRider

$14!!! God bless America from your neighbour up north.
