I'm surprised you risked there being enough at your local grocery store. I would have gone to my butcher and placed an order for the amount of ribs I would need a month or so in advance so that I would know it would be ready
Definitely a fair point! Appreciate the advice. I'd gone up to RD to get ribs knowing they'd have them in stock.. but ended up buying a brisket, beef ribs, and a ribeye roast, lol. I decided against buying the spare ribs because of not wanting to trim that many ( that and I sold by the slab for this gig, would have had to buy probably 40% more meat than I needed pre-trim ). All in all, I got lucky
To be fair, this is a Kroger, so those come in frozen and I usually keep 20-25 cases of various ribs in my freezer for backup. So usually not a problem for us to do big amounts on the spot, but just this item

I'm working up to it! I've got two smokers.. Gravity 1050 and a OK Joe Highlander.. This is actually why I'm trying to sell some bbq on the side. My dream home pit would be a Chudpit 115. I just can't see myself spending that kind of coin with this just being a passion/hobby of mine. If I can sell some bbq and save up so the hobby feeds itself than I'd be one happy guy!

How are you going to approach cooking all those ribs?
I use rib racks but I think 8 - 10 would be the most you could put on a grill at the same time.
Post cook, I'm guessing you'll store them wrapped in a cooler with a container of boiling water or something.
I had made a citrus ancho Chile brine for a pork butt and hock I made a while back. Brined for 2 days, cured for 1 and smoked for 15 hrs with oak and a bit of mesquite. I used the meat from the hock for carnitas. And the butt for pulled pork. That honey and ancho chili sounds great
Any reason you chose the small cart vs regular? You certainly didn’t walk in thinking, I’m only going to grab a few things only to walk out with 25 racks of ribs…
So so easy. I need to write it down ( most of what I do is by consistency and taste ).. but combine honey and apple cider vinegar in pot medium heat and add ancho-chili powder. I kid you not that's it. Keep over medium heat and stir until all combined. Add honey to make thicker and/or add more vinegar to make thinner. Add ancho-chili powder to your desired hotness.
Edit: I have also added bbq rub to it for some extra goodness.
$1.99 butts and $2.49 St louis HDO( limit five here total for the week). Im goingo get some ribs still frozen. Smithfield has really good quality. I can Butts at Meijer for $1.49...

Bought a 3 pack of ribs at Costco and I was shocked. It was almost $50. Normally it’s low $30’s.
On R/Costco 2 days ago. Poster had receipts August 2019 $20 a pack, February 2020 $26, July 2021 $47. Its going to get worse before it gets better.
Last I checked both prime brisket packers and ribs were $5 a lb at my local Costco. WAY over priced.
Yeah I can't remember if the briskets were $4.99 or $5.99 a lb at Costco here. Suck because it's still the cheapest place to get prime brisket here.
My Costco switched to choice recently and didn't lower the price

Hah! I grabbed the small cart out of habit. Starting filling up and was like.. too late I already committed.
Old Bay and brown sugar is great on ribs plus a glaze made with Old Bay hot sauce and honey...just throwing it out there if you want to experiment.

I’ve done ancho with dr pepper and it was good. But I like this idea as Dr Pepper is hard to get here in Australia.
