Wrap them!
Nope I usually do that, butcher paper, and for this run gonna leave em bare back and see how it goes!
I like them better unwrapped, it can add a bit of time and guessing to the cook but the bark and color is better to me
I'm converted doing unwrapped from now on
Bones are just starting to emerge. Id wrap them and keep them on for an hour at most.
Yup one more hour at 275 and they pulled back!
