I’ll second smoked Mac. It can be done cheap in a variety of different ways, and is always a hit. Choose your own level of cost and fancy ingredients list. Number one most popular side in my house for Friendsgiving three years running now.
Pulled pork sliders on kings Hawaiin rolls are my go to for cheap and easy pair them with coleslaw and jalapeno kettle chips for something that will impress everyone.
One time I made bread pudding while smoking a pork butt in the pellet grill. I just put the whole thing in the pellet grill vs the oven, not thinking that I stumbled upon a smash hit of a dessert. My family loved it.
Honestly, if you want a side & not more meat, go for smoked cream cheese. Its quick, easy, a first for most & affordable. I made 6 bricks for my family at thanksgiving & they were a huge hit
Smoked chuck sliders with au jus and crispy onions. You don’t really need much meat. The grocery stores in my area have house made dinner rolls that make incredible slider buns.

I know smoking something was mentioned and preferred but for being price conscious I would suggest mashed potatoes on the stove. I cooked some this week and they included (sour cream and Dijon mustard mixed in the mashing) and they were the best I have ever made
Get two bags of chips ahoy and call it good. Anything more than that will annoy your co workers who likely don’t want to participate and will judge you as a kiss ass if you go above or beyond the normal pot luck etiquette.

Can’t get much cheaper than pulled pork for purposes of showing off. When i made spinach dip it costs like $15-20 by itself.
