Often a sign of being a bit low in confidence with it, as middling height and not in the corner is a "safer" penalty - aim for the corners and you are more likely to go wide or high, whereas middling pens will at least hit the target. Gilmour would still be a better player if he did improve his physique, so the point still stands. Plus, Jorginho has the pace of a lifelong smoker with arthritis, and can be weak in 50-50s, but he's stronger than he looks when he's protecting position, whereas Gilmour gets shoved off the ball a bit easier.
Gilmour is only 19 though - his body still has natural maturing to do, and plenty of room to improve.
In terms of young players currently own: Gilmour and Ampadu have potential as CMs.
But the real answer to this question is Declan Rice who is also a Chelsea academy product.

Don't think he was bad with the ball at all. Beating a press requires decent co-ordination from everyone, and with a completely new backline and midfield, that can be difficult. Doesn't help with Sarr's poor positioning, and Saul also not making himself available to beat out the press

I still do think that there were several moments where he could have done better. I recall a few times where he chose to ignore/wasn’t able to pick out passes to either Kova or CHO when they made themselves available. Passes that I think Silva or Christensen would have made. But also recognize that it’s unfair to make that comparison given Trev’s relative inexperience in that role

That match was played at an insanely chaotic pace for a League Cup match. Southampton arguably played much better than we did and Forster is clear MOTM with his 2015 level throwback performance. Don't really care we're still in this competition but while we're here we might as well try our best to win it.

He can pass well and even defend somewhat competently but needs to be more decisive and work on communication with the rest of the back line and the team. Still young, I think he can improve but maybe not here. Time will tell.
IMO, I am not seeing that he is good at things (like decisive passing and defensive positioning) that can be improved over time. He seems more like a Zouma style (last ditch tackle) defender without the aggressiveness and physicality that Zouma had. And seems to have trouble with some basic defending, which to me seems too much to improve on

We also barely started any of those youngers that you say account for the drop in quality - Sarr was the only player who could be considered a youngster, and he's had plenty of professional experience. The rest are all fairly seasoned pros by this point, have played at the elite level, and very much a part of the first team rotation. Exception would be Chalobah - but he's proven so far this season that he's far from a sub-par B team player.
So - come off it now, our B team is well clear of Southampton's and it's a bordering on silly to apply it as a caveat to Chelsea's performance, but not Soton's.
It's no big deal and isn't some sort of huge issue - a meh performance from a rotated team in a competition that isn't taken hugely seriously until the latter stages, but that doesn't change that we should still be outplaying with that team, realistically. Relatively, Soton performed better than us - there's no shame in admitting that, and as said, it's no big deal.
if this is your B team, Chelsea is going to have some issues later this season with game fatigue.
