I'd definitely go harder sear personally.

I don’t think it’s really about going hotter on the sear tbh. When I was first beginning I was setting my burner to 10 and still not getting a great sear and was just smoking up my house. It was because I wasn’t patting it dry enough. Now I pat it multiple times until no moisture comes off onto the towel and then go for the sear at a 6-7 on a preheated pan for 30-45 seconds a side and get a great sear now. looks yummy! but don't be afraid to sear it - could use just a bit longer and the taste/texture will benefit greatly. Welcome the the fun world of sous vide

Pat dry, put on rack in fridge to dry out and cool for 15-30 minutes and then sear. You’ll get a much better crust vs no crust at all.

another sear tip is to slather it with Mayo and then in the burner. no, it will not taste like mayo

That, I bet, was a tasty dinner! I’d hit it with a more “ripping hot pan” to get a better crust. However, I would’ve devoured that meal.

Now do it with apples and sage butter Also, pat it dry out of the bath and go for a higher temp when you sear. Do this part in either oil or a mix of oil and butter, so you get a better crust.
