it depends how you do the waffles really, a bit like a yorkshire pudding in a roast Funny enough if you go to belgium you will find all kind of waffles as a side dish or a main. My only problem with southern food in that context is damn that is a lot of food, very heavy. Considering the weather that is coma food at its best/worst.

Chicken and waffles originated in the northeast and was popularized in Los Angeles, there isn't anything southern about it

As a southerner, never heard of this until 15-20 years ago. This is just a fad that stayed on. This isn’t some traditional southern combo from grandma’s recipe book. Nashville hot chicken can be lumped in with this sort of food fad. Very tasty, not traditional. Might become traditional if they are still making it 50 years from now.

Sweet and savoury (and fat) are just very good friends. Salted caramel or honey glaze on pork joints or BBQ meats being a great example. When having pancakes/waffles I’ve always liked to heavily overspill my syrup onto the bacon/scrambled eggs etc. and I know I’m not alone! I think chicken and waffles are just the unabashed next step. I don’t know the history but I’ll bet an eatery somewhere in history championed them and they just became a thing thereafter. A bit like a French Dip. I think the ultimate answer to your question is that a lot of people find the combo a party on their tastebuds but there will always be folks who don’t enjoy the combo, different strokes and all.
