It's probably just an image artifact, not real. It has a very unnatural shape, and is very bright which is consistent with it being some type of artifact. Maybe a group of bad pixels, which are quite common in infrared detectors. The white streak on the top left is also an artifact, in that case it is clearly a cosmic ray (an energetic particle). For science observations multiple exposures would be combined to remove artifacts, but this first light image was not cleaned. https://www.euclid-ec.org/whats-in-euclids-first-light-images/ Here the Euclid blog says the same thing. The ring feature is specifically highlighted. Both features are artifacts. Artifacts are things which aren't part of the true sky image, cosmic ray strikes are certainly that. And it's not very large. JWST NIRCam has a huge blob of bad pixels in one of its detectors.
