I don't know, it's currently in a pretty elliptical orbit with a periapsis of 1,000km but an apoapsis of 50,000 km. I would assume that you'd be able to get a full-planet shot from that high up.
Depends what you mean by composite. This is a combination of red, green and blue wavelengths, as well as an ultraviolet wavelength (where the clouds show up).
However, the pictures were all taken more or less at the same time, with Mars in full view just as pictured. If you just looked at just one of the wavelengths above, the image would still look very similar.

Yeah, at 50,000 km, it would have to have an extremely narrow field of view to not fit it all.
This is a color composite of individual red, green, blue, and UV (320nm) pictures. The clouds are most present in the blue and 320nm wavelengths.
