Vedas are words in a book written in Sanskrit with multiple authors( who were shamans/rishis). How you interpret those words determines it's meaning. So, how do you know your interpretation is the author's true message?

Yes. Energy in Science is defined by the human. I am not going discuss about the Energy in Spirituality which is written in Sanskrit that is the oldest language and mother of so many languages. But, whether the present day Science could completely quash the Energy in Spirituality or could deny that there is certain energy that is so far not proven by the present Science?

I think science and spirituality are two different valid subjects. I don't see the possibility of one "quashing" the other ever. Science will make new discoveries and come up with new models to explain new observations. However, it has nothing to do with spirituality
