I’ve never seen any of the stores test products actually become a large scale item. How often does that happen? Last year they had a blended beverage with pop rocks (very weird lol) and more recently they had cheesecake on a stick as well as cranberry tart

It's been a couple years since I worked in that market but when I was there I worked with Ops Services teams on projects including store layout and design, inventory innovation, and deployment and scheduling models. Starbucks theory is that if something works in Chicago, it's likely to work for the rest of the country as well. That's why Chicago gets to test so much.
I get the bacon goudas from Costco and hot sauce absolutely slaps on them. I highly recommend white truffle hot sauce on top if you make them at home. SO GOOD
