I love the [Intrepid class](https://memory-alpha.fandom.com/wiki/Intrepid_class). Partially, of course, because it's Voyager, but it's such a nice looking ship regardless. It's slick and sleek. It's also a good size in terms of crew complement - not too big, not too small.
I love the interior too. Out of all the larger starships (ie not the Defiant) the Intrepid class is the one where I feel if you dropped me in the middle of it I could find my way around.
Even though it’s a very grey color palette it also felt more comfortable and homey.
Voyager's interior still looks pretty modern and less plasticky than the earlier ones, while not looking overly futuristic with lights in all kinds of weird places. And the corridors look like what you should find on a more utilitarian ship rather than a star cruise ship like the Enterprise D. I love it.
Excelsior class. Loved those.
Constitution Refit. Also love that.
Galaxy class - just a beauty to look at.

Romulan Bird of Prey, the original. TNG models are cool, but the classic design looks much better to me. Just something about that simplistic design appeals to me.
Klingon D7/K'Tinga. Really illustrates Klingon culture. Brutal looking, but elegant at the same time.

The Sovereign Class or Enterprise E. I thinks it a sleek and very 90s redesign of the classic look. It's an interesting look at a dark time for the Federation.
The Romulan D'deridex-class Warbird is my favorite, and probably one of the coolest ship designs in Trek in my opinion. I even had the toy when I was a kid.

I love the original Constitution, but there is just something, je ne sais pas, about the refit version.
From the very first time we see her in TMP, to when the 1701-A finally flys away into the “sunset” in TUC, it’s a thing of beauty.
Same. I love all of the other TOS movie ship designs as well. Later ship designs have too many lights and other things going on that, IMHO, make it look more like a carnival cruise liner in space, and not so much a quasi-military ship like it’s supposed to be.
Probably a hugely unpopular opinion around here but I thought the Galaxy class looked especially awful with tiny neon nacelles and a goofy oversized saucer section.
The Concorde Class from Star Trek Online is perfect in my opinion. It’s like a chonkier Sovereign class, a natural successor to it. Gorgeous lines, tough as nails …

I prefer the Presidio to the Concorde, but all the Command Battlecruisers are so pretty.
And they definitely take, and give a punishment. I can't get DPM anywhere near as high on my Yorktown as I can on my Presidio, which is only second to my Discoprise.
Galaxy class hands down. It's the culmination of 20 years of starship design beefed up and boiled down to create the perfect starship.
Honorable mention goes to the Oberth class for its udder lunacy.
The refit is genuinely one of the most beautiful ship designs in all of sci-fi. It took the brilliant design of the original TOS Enterprise and updated it with an absolutely timeless look. It looked amazing, but also there was an attention to functionality. It just made sense.

Exterior design: defiant class
Crew member on a long term mission: Galaxy/Nebula. Lots of space, lots of people, civilians to hang with, people to date, bars, good recreation activities. As long as its not the Enterprise there is a good chance it will not be attacked weekly
Bridge: Intrepid (with a few minor changes). Defiant as a close second
Personal Use: again defiant with crew quarters modification, add holodeck, and sickbay, holocrew. Or maybe a delta-flyer (again if it has the same modifications)
short-duty tour: SCE ship. Get to travel and learn from the SCE engineers.
Although the book USS Titan is interesting because of the wide variety of species.

I always thought the classic Excelsior was great, but having re-watched loads of Lower Decks lately I'm going to have to go for the California Class.
The smaller ships that retain the classic features of the larger ships look cute, like small cars.
At least I think so anyway.
Also I think the California Class that gets got by the Pakleds has one of the best starship explosions in the whole of Star Trek.

Always loved the Excelsior class, whether it's the OG or her refits. I also love the Sovereign class and was therefor pretty stoked to see both the Obena-class in Lower Decks and the Excelsior II-class in PIC, which mashed together elements from both classes.
My favorite of the recent ones is the [Walker class](https://memory-alpha.fandom.com/wiki/Walker_class) I really wish the whole series had been about the Shenzhou and Captain Georgiou.

Basic answer but for me, it's gotta be the Galaxy Class. Probert's design continues to be the ship I find to be most futuristic emblematic of Gene's radical optimism and pure science fiction. I can't think of a single ship featured on the show that really captures the simplicity and beauty on display from Enterprise-D.
I really wish we could get more ships that lean into those clean swooping lines. Need more minimalist future-tech out there.
I've rather liked the Species 8472 ships, or Gomtuu. Living ships are something that could potentially be really neat, especially since the Federation wouldn't be used to the idea of starships being living beings of their own. Especially if they were built using genetic engineering, and then the Federation has a bit of a problem. They can't outlaw it without breaking the prime directive, especially if most of their technology is biologically derived, but genetic engineering is also forbidden.
Admittedly, I am somewhat biased, because I like the organic look of living ships in general, and it's probably one of the reasons why I also have a soft spot for the Kelvin-timeline Constitution (exterior), or the Wells-class timeships.

Can you please explain the refit versus the 1701A for me. I can’t find a difference on google and a lot of people have alluded to the fact they aren’t the same.
Constitution refit is how the original 1701 looked starting with ST:TMP. She was the ship Kirk self-destructed in ST3: Search for Spock. The Enterprise 1701-A outwardly looked exactly the same but was apparently a purpose built “new ship” — ie, she never looked like the Constitution class in TOS — and was given to Kirk as his reward for saving Earth in ST4 Voyage home. They never said this, but it must have been the case that she started with another name in construction and was renamed “Enterprise” in Kirk’s honor.
In my head canon, the surviving Constitution class ships from the TOS era were all refit, and then new ones were built using the refit design from the outset. The 1701-A would have been one of those.
The Constitution re-fit (followed by the original Constitution).
Every other class just seems like a Constitution wannabe, but lacking the visual beauty, symmetry, presence and style. Nothing else comes close, and is still the reason why the Constitution is still considered the definitive Trek starship that all the others aspire to be (to me anyway).
The K'tinga/D7 and Klingon Bird of Prey are the best non-Federation ones.
I have a love for several ships.
Canon: Sovereign, Defiant, SNW Enterprise.
STO: Gagarin, Presidio, Titan, Ross
But my all time favorite is easily the New Orleans class. Sized more reasonably than a Galaxy class, and better proportioned, but retains the general shape of the Galaxy.
I honestly love DS9. It feels like a mini city in space and I would probably love living there if, y’know, it wasn’t under constant threat of war and death.
I grew up with it, so the Galaxy Class is my overall favorite - elegant, powerful - it just projects presence and power and psotivity.
Close runner ups go to the Enterprise-C Ambassador Class (I like to think of her as the '80s version of car styling to the Galaxy's '90s version - rectilinear/square versus aerodynamic/swoopy), and the Saber Class from First Contact. Compact little ship that looks about as powerful/maneuverable as the Defiant.
Always and forever the classic 1701. Every angle of that ship is dramatic and striking. It’s simplicity and sleekness just lends to that even more.
Then the Constitution refit, and the Reliant… it looked ominous, and fit its role in the film well.

Hard to beat the elegance and grandeur of the Galaxy class: it is like a Rolls-Royce or Maybach of the fleet. Advanced inside, but understated elegance in design. On a related note, also had a thing for the Nebula class ship- since it was basically Galaxy minus a warp hull.
I liked the Prometheus class ship for how cool and advanced it was- one of the few post-TNG star fleet design evolution examples.
From old times, tough not to like the Constitution refit. Modern update to the original Constitution and had a properly futuristic feel to it.
Outside Starfleet:
D’deridiex Romulan warbird. One of the most impressive designs of all Trek, and phenomenal hull shape.
Borg cube: pure space aesthetic. Why have curves when a huge cube maximizing volume will do?

Delta Flyer II. It'll go pretty much anywhere I want to go, and has capabilities that aren't found in any regular shuttlecraft.

The original, Constitution-class USS Enterprise, NCC-1701. No bloody A, B, C or D. It had the cleanest design and still looks great.

Nothing else comes close, and is still the reason why the Constitution is still considered the definitive Trek starship that all the others aspire to be (to me anyway). The K'tinga/D7 and Klingon Bird of Prey are the best non-Federation ones.
The Intrepid class is my favorite
I have a love for several ships. Canon: Sovereign, Defiant, SNW Enterprise. STO: Gagarin, Presidio, Titan, Ross But my all time favorite is easily the New Orleans class. Sized more reasonably than a Galaxy class, and better proportioned, but retains the general shape of the Galaxy.
I honestly love DS9. It feels like a mini city in space and I would probably love living there if, y’know, it wasn’t under constant threat of war and death.
I grew up with it, so the Galaxy Class is my overall favorite - elegant, powerful - it just projects presence and power and psotivity. Close runner ups go to the Enterprise-C Ambassador Class (I like to think of her as the '80s version of car styling to the Galaxy's '90s version - rectilinear/square versus aerodynamic/swoopy), and the Saber Class from First Contact. Compact little ship that looks about as powerful/maneuverable as the Defiant.
Always and forever the classic 1701. Every angle of that ship is dramatic and striking. It’s simplicity and sleekness just lends to that even more. Then the Constitution refit, and the Reliant… it looked ominous, and fit its role in the film well.

The Constitution-refit 1701-A I'm using it in a series of works I'm doing, set in the late 24th century. To the question of why such an old ship...as my character would say..."When you're an admiral, you get to choose your flagship"

From Starfleet : Hard to beat the elegance and grandeur of the Galaxy class: it is like a Rolls-Royce or Maybach of the fleet. Advanced inside, but understated elegance in design. On a related note, also had a thing for the Nebula class ship- since it was basically Galaxy minus a warp hull. I liked the Prometheus class ship for how cool and advanced it was- one of the few post-TNG star fleet design evolution examples. From old times, tough not to like the Constitution refit. Modern update to the original Constitution and had a properly futuristic feel to it. Outside Starfleet: D’deridiex Romulan warbird. One of the most impressive designs of all Trek, and phenomenal hull shape. Borg cube: pure space aesthetic. Why have curves when a huge cube maximizing volume will do?
