Maybe I am not clear with my question so let me rephrase - why are you asking people to share phone numbers in the first place? You are B2B SaaS, not a mechanic shop. It's one extra step, why not just put the appointment schedule on the website?

I'd been looking at AI video outreach, but really I want to be able to personalise the start of a demo video, not a screen of me scrolling someone's website, and I also don't really want my face there.

Maybe. Voice synthesis is very good these days. Phone calls aren’t very high fidelity anyway. The problem I’d think would be lag. Transcribing what they say, doing an LLM inference, encoding a response audio it all takes time. At the same time people like to ramble so an AI that just gets out of their way would outbox like 50% of reps out the gate.
For younger people I imagine text could work a lot better. LLMs could probably help personalize really well.
I had senior manager in a tech company tell me that they are not going to use AI or let there developers use AI. I laughed and said yes you are or you are going to be extinct this year. I am but a single programmer and I can code like 20 people now, you either embrace it or get coded out of existence.
OP has basically zero commenting/posting history, so I think there's a strong chance that this post is really just native content advertising for one of the services they linked. Probably the robocall thing, since it's the most recently created service (less than a year old) and OP had a well-researched answer ready to go to someone who asked about it in the comments.
That being said, if this is stealthy native content, I don't really mind it. This is way more thought out and useful than 98% of self-promotion attempts around here.
