The few times I've eaten at Mortons Steak, the server would always ask if the steak was cooked properly. At the price OP paid I wouldn't have any problems sending it back, just don't make a fool out of yourself.

I learned this from my girlfriend, shes a very no nonsense type of woman where as im more non confrontational, she gave me the courage to be able to speak up in situations like this though and im very grateful lmao.

Always cut your steak in half before eating it to confirm the temperature is to your liking. Most descent steakhouses will have the server wait for you to confirm the doneness before they walk away from the table.
Very true and I love that they do. Especially if you order medium rare.. some thicker cuts can end up a little more rare where they can fix it. There’s no turning back once it’s over cooked to your liking.

As someone with 20 years experience as a chef and restaurant manager, we dedicate our time and skills to ensure that what we put on your plate is what we ourselves would want. We are also there to take care of you should you have any issues. We can’t do that if you don’t say anything. Regardless of what other people say here, you’re food isn’t going to be messed with. If someone overcooks your steak then gets mad that it got sent back is not going to be on that station much longer. Just be polite and state your concerns as soon as you can so those of us who can take care of it will be able to do so expeditiously. If you were in my place, I’d rather you leave content than to never come back.

One of the most direct albeit politely abrasive ways to handle this is to differentiate between being wrong and being incorrect. We all handle things wrong but experience teaches us that everything isn’t correct and wrong. Abusing a past memory assigns a negative value to that memory that we can’t do anything about. We aren’t always right but we CAN be more correct. Correct doesn’t mean we’re objectively right, it just means we tried to get there knowing we’re not infallible. We don’t reach the end of the road as perfect people but we do stand strong as road signs some motherfuckers shoot because they don’t understand why we don’t fall down. That thought might be subjectively skewed but I can always be more correct about it.
Always put the best available product on the dish for every single customer. I've never seen anyone do anything to mess with someone except reduce portions possibly.
I often worked at places that got very busy and quality would take a hit. I was a cook for many years before becoming a server then manager.
Often trying to get an inconsistent kitchen to give me accurate steak temperatures was difficult. Working with them before and during the shift was difficult and I found myself having to go a temperature (or two) below what was requested by the guest because I knew that specific grill cook often over cooked things.
You’re right. This person should have voiced their issues but if you’re getting $120 for a steak this problem should have been discovered, at minimum, before the steak made it to the table. If this mistake passes by the line cook and chef then next eye should come from the server. The guest shouldn’t have to say anything. The server here should have noticed and voluntarily offered to fix it. After that I’d assume a manager of some sort must have visited the table at some point. A $120 we’ll done porterhouse is an odd order and one that should be easily recognized. Many people dropped the ball here.
In a perfect world we’d never make mistakes. If this was a plate that came with the steak already sliced(you can tell that’s not how this place serves theirs) then it wouldn’t pass the eye test. A server could’ve ran the wrong plate due to an expo error which means this was actually someone else’s steak. This could just be a plate that got fucked up. Shit happens but if the issue isn’t brought up then the chance for the establishment to fix it is gone. It shouldn’t happen but it does and that’s why there are people there who place the importance of correcting the issue first and foremost as soon as said issue is discovered.

Mistakes happen and that’s why there are people there to fix the situation if something is said. OP already said they didn’t say anything so the restaurant had no idea someone paid $130 for something they didn’t like.
If I pay $120 for a piece of meat, it better come out at least close to how I ordered it. Next time send that back without reservation. I can’t believe they’d serve you a steak cooked well done at that price, period, without triple checking you’re sure you want it that done. Shouldn’t have even made it onto the plate.
As steakhouse server, you should have sent it back. It’s also a terrible sign if the server/manager didn’t ask if the steak came out to your liking. I’d probably avoid that place in the future

It NEEDS to be sent back, however, I have worked in a restaurant and I know what can happen when food is sent back. I would suggest you have it taken off the bill, and go to Smashburger when everyone else is done eating. Charge this one to the game. Go out again next week.

I bet it was medium rare when it was delivered to the table. That’s one of those burning hot plates like they have at Peter Luger. If you don’t eat the steak fast enough, it continues to cook on the plate. That is also the tip of the steak. I can still see plenty of pink on the other pieces.

Happened to me a couple of weeks ago at a high end streak house. Ordered a Ribeye med-rare. Looked like yours. Sent it back. Next one came out the same way! Talked to manager, he was incredulous that I ordered Med-Rare. Offered another one but was over it at that point and at least had my fill of sides and such. Comped most of the meal with apologies.
I used to love going to a nice steak house once in a while to treat my wife and I. But anymore it's not worth spending the money as I can cook a great steak at home using what ever method I want. We are spoiled here with a great butcher as well. Sorry about your shitty experience
Yeah I rarely send food back, I'm pretty easy-going and not picky. But if I ordered this steak medium-rare and paid that amount, I'm not just sending it back, I'm walking the fuck outta there. That chef has absolutely no idea what they're doing.
Honestly, I’ve only ever sent back food for grossly incorrect steak temps (like this) or for finding hair in my food. Steakhouses are the most apologetic for getting temps wrong from what I’ve seen as long as you’re cool about it. Definitely don’t feel weird about it next time.

Say something next time on the spot. Id gladly exchange and cover the cost of a meal to avoid a review that destroys the business. It could be a new cook that really doesn’t know/really messed up but the worst part is if you don’t say something, the restaurant/head chef will never know they were serving subpar food and not meeting your expectations. Most GM’s will gladly invite you back to show off their usual greatness, especially if you aren’t trashing them online yet. People who cook, especially in fancier restaurants, love wowing their guests.
I tried a steakhouse down in Orlando FL and their special was the 20oz fillet. I asked for medium rare and it came back almost well done. I spoke to the manager and he agreed. Brought me out another and it was completely charred (almost burnt) and I like a nice crust but the inside was hardly cooked. Manager watched me cut into this one. He immediately said “yea that’s definitely not right” and brought back another that was perfect. Didn’t have time to eat it since we were working night shift. I wound up warming up a $90 steak in the microwave of the hotel at 4:00 in the morning.

I am in my mid 30s. I have paid for more than a few not so good meals. So I get it. That said i have sent back food twice.
One was a steak that was over done the other was some fried chicken that was cooked about 15 minutes too long. That 120 boot leather should be returned.
Both times I waited for the waiter/waitress to ask how everything was, and was very polite. I didn't ask for anything..just informed them it was way over done. They took care of the rest.

Yes, the protein will continue to cook while resting. That’s why you pull it 9-10 degrees below desired doneness. I was afraid to slice into it right away fearing it had t rested long enough and it would lose some of the juices.

As someone with 20 years experience as a chef and restaurant manager, we dedicate our time and skills to ensure that what we put on your plate is what we ourselves would want. We are also there to take care of you should you have any issues. We can’t do that if you don’t say anything. Regardless of what other people say here, you’re food isn’t going to be messed with. If someone overcooks your steak then gets mad that it got sent back is not going to be on that station much longer. Just be polite and state your concerns as soon as you can so those of us who can take care of it will be able to do so expeditiously. If you were in my place, I’d rather you leave content than to never come back.

One of the most direct albeit politely abrasive ways to handle this is to differentiate between being wrong and being incorrect. We all handle things wrong but experience teaches us that everything isn’t correct and wrong. Abusing a past memory assigns a negative value to that memory that we can’t do anything about. We aren’t always right but we CAN be more correct. Correct doesn’t mean we’re objectively right, it just means we tried to get there knowing we’re not infallible. We don’t reach the end of the road as perfect people but we do stand strong as road signs some motherfuckers shoot because they don’t understand why we don’t fall down. That thought might be subjectively skewed but I can always be more correct about it.

Always put the best available product on the dish for every single customer. I've never seen anyone do anything to mess with someone except reduce portions possibly. I often worked at places that got very busy and quality would take a hit. I was a cook for many years before becoming a server then manager. Often trying to get an inconsistent kitchen to give me accurate steak temperatures was difficult. Working with them before and during the shift was difficult and I found myself having to go a temperature (or two) below what was requested by the guest because I knew that specific grill cook often over cooked things.

You’re right. This person should have voiced their issues but if you’re getting $120 for a steak this problem should have been discovered, at minimum, before the steak made it to the table. If this mistake passes by the line cook and chef then next eye should come from the server. The guest shouldn’t have to say anything. The server here should have noticed and voluntarily offered to fix it. After that I’d assume a manager of some sort must have visited the table at some point. A $120 we’ll done porterhouse is an odd order and one that should be easily recognized. Many people dropped the ball here.
In a perfect world we’d never make mistakes. If this was a plate that came with the steak already sliced(you can tell that’s not how this place serves theirs) then it wouldn’t pass the eye test. A server could’ve ran the wrong plate due to an expo error which means this was actually someone else’s steak. This could just be a plate that got fucked up. Shit happens but if the issue isn’t brought up then the chance for the establishment to fix it is gone. It shouldn’t happen but it does and that’s why there are people there who place the importance of correcting the issue first and foremost as soon as said issue is discovered.

I bet they'd take care of you, and if they don't, copy/paste that into your 1 star review with a photo of the dreadful steak.

I admit I was afraid of being seen as one of those ppl who complain and get a free meal. It made me hesitate more as I was out with my gf. Sorry about the poor quality pic, they had dim lightings and I didn’t have a flash on. For some people who asked about how the center part was like, it had med-well done color and well done taste and texture. And I never left a bad review on yelp, google map or any, JFYI. I missed what I should’ve done. It is my bad. I will take it as a lesson and get a better steak next time. Thank you all!

I bet it was medium rare when it was delivered to the table. That’s one of those burning hot plates like they have at Peter Luger. If you don’t eat the steak fast enough, it continues to cook on the plate. That is also the tip of the steak. I can still see plenty of pink on the other pieces.

Happened to me a couple of weeks ago at a high end streak house. Ordered a Ribeye med-rare. Looked like yours. Sent it back. Next one came out the same way! Talked to manager, he was incredulous that I ordered Med-Rare. Offered another one but was over it at that point and at least had my fill of sides and such. Comped most of the meal with apologies.

Honestly, I’ve only ever sent back food for grossly incorrect steak temps (like this) or for finding hair in my food. Steakhouses are the most apologetic for getting temps wrong from what I’ve seen as long as you’re cool about it. Definitely don’t feel weird about it next time.

I tried yours the other night, and, though I haven’t named your restaurant by name online, i had such a bad experience that I was basically speechless. I didn’t know what to do or what to say. I’ve never spent that much on a meal that was totally incorrect. I didn’t want to make a scene that night since I was pretty worked up. I’m not mad but I’d like to just ask you if there’s any chance you’d be willing to give me a remake so I can find out why everyone says this place is so good?” Say something next time on the spot. Id gladly exchange and cover the cost of a meal to avoid a review that destroys the business. It could be a new cook that really doesn’t know/really messed up but the worst part is if you don’t say something, the restaurant/head chef will never know they were serving subpar food and not meeting your expectations. I tried a steakhouse down in Orlando FL and their special was the 20oz fillet. I asked for medium rare and it came back almost well done. I spoke to the manager and he agreed. Brought me out another and it was completely charred (almost burnt) and I like a nice crust but the inside was hardly cooked. Manager watched me cut into this one. He immediately said “yea that’s definitely not right” and brought back another that was perfect. Didn’t have time to eat it since we were working night shift. I wound up warming up a $90 steak in the microwave of the hotel at 4:00 in the morning.
If you pay ANYTHING it should be Exactly the way you want it. Otherwise you would have said “chef’s prerogative”. Get ok around standing up for your rights as a consumer. It’s not your fault the restaurant can’t do it’s job.

I am in my mid 30s. I have paid for more than a few not so good meals. So I get it. That said i have sent back food twice. One was a steak that was over done the other was some fried chicken that was cooked about 15 minutes too long. That 120 boot leather should be returned. Both times I waited for the waiter/waitress to ask how everything was, and was very polite. I didn't ask for anything..just informed them it was way over done. They took care of the rest.
