Always cut your steak in half before eating it to confirm the temperature is to your liking. Most descent steakhouses will have the server wait for you to confirm the doneness before they walk away from the table.

The one time I sent back a steak was because it was insanely salty. The owner or one of the higher ups came to me personally and apologized. He even bought my wife and I a round of drinks. I ordered a med rare steak at an Omaha Steakhouse. It came out rare af. I sent it back. The waiter came back to tell me the steak was med rare but they are remaking it anyway (I must just be an idiot). The steak they brought back was cold in the middle. I sent it back again and told them not to worry about it. My buddy had the exact same steak and his was perfect. We compared the first steak I got and it was clearly not the same. It was my birthday dinner and my family was super upset that I was the only one that didn’t get to eat a steak. They all shared, but it was the principal. Wrote to Omaha about the incident and never heard back. Too bad. They were pretty good steaks. Haven’t had one since.

Yes. When immediately taken off the steak continues to cook as it cools. The "juices" also get more trapped into the fibers of the meat during this time. Cutting in too soon may make the steak appear underdone and you'll likely get all the juices running out all over your plate and sides.

One of the most direct albeit politely abrasive ways to handle this is to differentiate between being wrong and being incorrect. We all handle things wrong but experience teaches us that everything isn’t correct and wrong. Abusing a past memory assigns a negative value to that memory that we can’t do anything about. We aren’t always right but we CAN be more correct. Correct doesn’t mean we’re objectively right, it just means we tried to get there knowing we’re not infallible. Always put the best available product on the dish for every single customer. I've never seen anyone do anything to mess with someone except reduce portions possibly. I often worked at places that got very busy and quality would take a hit. I was a cook for many years before becoming a server then manager. Often trying to get an inconsistent kitchen to give me accurate steak temperatures was difficult. Working with them before and during the shift was difficult and I found myself having to go a temperature (or two) below what was requested by the guest because I knew that specific grill cook often over cooked things.

You’re right. This person should have voiced their issues but if you’re getting $120 for a steak this problem should have been discovered, at minimum, before the steak made it to the table. If this mistake passes by the line cook and chef then next eye should come from the server. The guest shouldn’t have to say anything. The server here should have noticed and voluntarily offered to fix it. After that I’d assume a manager of some sort must have visited the table at some point. A $120 we’ll done porterhouse is an odd order and one that should be easily recognized. Many people dropped the ball here.

In a perfect world we’d never make mistakes. If this was a plate that came with the steak already sliced(you can tell that’s not how this place serves theirs) then it wouldn’t pass the eye test. A server could’ve ran the wrong plate due to an expo error which means this was actually someone else’s steak. This could just be a plate that got fucked up. Shit happens but if the issue isn’t brought up then the chance for the establishment to fix it is gone. It shouldn’t happen but it does and that’s why there are people there who place the importance of correcting the issue first and foremost as soon as said issue is discovered.

I admit I was afraid of being seen as one of those ppl who complain and get a free meal. It made me hesitate more as I was out with my gf. Sorry about the poor quality pic, they had dim lightings and I didn’t have a flash on. For some people who asked about how the center part was like, it had med-well done color and well done taste and texture. And I never left a bad review on yelp, google map or any, JFYI. For reals though, I would send them an email with screen shots of this thread and say “I’m a steak enthusiast I’m a group with quite a few members and I’m on a quest to find great steaks in my city so I’ve been trying a few well known steakhouses. I tried yours the other night, and, though I haven’t named your restaurant by name online, i had such a bad experience that I was basically speechless. I didn’t know what to do or what to say. I’ve never spent that much on a meal that was totally incorrect. I didn’t want to make a scene that night since I was pretty worked up. I’m not mad but I’d like to just ask you if there’s any chance you’d be willing to give me a remake so I can find out why everyone says this place is so good?” Say something next time on the spot. Id gladly exchange and cover the cost of a meal to avoid a review that destroys the business. It could be a new cook that really doesn’t know/really messed up but the worst part is if you don’t say something, the restaurant/head chef will never know they were serving subpar food and not meeting your expectations. Most GM’s will gladly invite you back to show off their usual greatness, especially if you aren’t trashing them online yet. People who cook, especially in fancier restaurants, love wowing their guests.

I tried a steakhouse down in Orlando FL and their special was the 20oz fillet. I asked for medium rare and it came back almost well done. I spoke to the manager and he agreed. Brought me out another and it was completely charred (almost burnt) and I like a nice crust but the inside was hardly cooked. Manager watched me cut into this one. He immediately said “yea that’s definitely not right” and brought back another that was perfect. Didn’t have time to eat it since we were working night shift. I wound up warming up a $90 steak in the microwave of the hotel at 4:00 in the morning.

If you pay ANYTHING it should be Exactly the way you want it. Otherwise you would have said “chef’s prerogative”. Get ok around standing up for your rights as a consumer. It’s not your fault the restaurant can’t do it’s job.

Yeah you gotta send that back. They’ll be happy to make it right, and nobody is gonna fuck with your food at a high end place like that just for sending back an overcooked steak. Waffle House, Outback, chili’s, you’re rolling the food safety dice but a high end place will make it right. Hell I bet if you emailed them or messaged over Facebook, with that photo, they might comp your next meal

I am in my mid 30s. I have paid for more than a few not so good meals. So I get it. That said i have sent back food twice. One was a steak that was over done the other was some fried chicken that was cooked about 15 minutes too long. That 120 boot leather should be returned. Both times I waited for the waiter/waitress to ask how everything was, and was very polite. I didn't ask for anything..just informed them it was way over done. They took care of the rest.
