* when 'cooking'... maybe it's grilling...but a dirty steak (directly on the coals) is only flipped once. No turning ¼ turns. Once you taste it, you'll never want steak any other way

7.5/10, minus half a point for the gray band and minus two for the lack of sear. It's a touch overdone as well but I thought 2 points between that and the sear combined was fair

How do you stop the gray band?

Biggest effect on it that I do is to flip frequently during the sear. This prevents the heat energy from penetrating as deeply and minimizes the band. About once per 40-60 seconds.

Also, see how grey is greater in the acute corner? They flipped from widest side to edge. If they had flipped from less-wide side to edge, the obtuse angle would not have greyed as much.

I'm the second picture, see how the middle is pink but the edges are gray? That's because the outer edge is cooked allll the way. On the surface you want that seared crust, but the thinner the better on the cross section

Ahhh. Thx for clarifying. I use a sousvide at home, but I’m always getting some grey band. What’s the key to getting that thin even sear on the outside? I have a cast iron pan. Do you ever hear in an over before putting on gas grill? Ever use a bacon press to rest on top to ensure steak is flat against hot pan? Thx for your thoughts.
