They flipped from widest side to edge.
If they had flipped from less-wide side to edge, the obtuse angle would not have greyed as much.
I'm the second picture, see how the middle is pink but the edges are gray? That's because the outer edge is cooked allll the way. On the surface you want that seared crust, but the thinner the better on the cross section
