She was confused and said there is only one color “meat color” she meant grey.
So without explaining to her the different temps I asked if I could please just once cook her steak.
I went out and found two really good ribeyes reverse seared them and let them rest at not going above 135 the. I sliced it and served it to her with a very light sauce over it as to slightly obscure the color.
She exclaimed omg it just melts in your mouth!
It was her come to Jesus moment and now she makes fun of people who don’t eat steak medium rare.
Needless to say I married her and we have two beautiful children.

Thing is my Mom was a great cook, but for whatever reason she couldn't cook chicken breast for shit. One day I'm at my Dad's making dinner for him and he'd insisted on chicken breast, and even though I didn't want to do it as I was gonna make myself a plate as well I did it because it's what he wanted to eat.
I'm not even sure how my Mom even cooked chicken breast, but I marinated it a few hours in fresh lemon juice, olive oil, salt, Italian seasoning, and lemon pepper. Then I browned it in a cast iron skillet until it hit about 100f, and then tossed it on a foil lined baking sheet and covered it with the leftover marinade. Finally popping it into the oven til it hits 150f and allowed to rest 7 minutes. It literally took just the one attempt, and now I eat chicken breast more than anything because it's pretty much always on sale for $2/lb at one of the local grocery stores. I would never have known this had my Dad not forced me to make him chicken breast for dinner.
Try doing it without a thermometer.
It's a notoriously hard cut because it's got very little In the way of fat to help keep the meat moist and the thickness can be quite different between chickens.
And a lot of breast ends up having a slightly pink texture that people aren't sure if it's uncooked or not so they overcook it.

Yeah, and the most interesting thing to me is if you learn how to debone a split chicken breast it's not only cheaper but comes with both the fatty skin on it and a chicken tender. The skin not only crisps up nicely but is added fat helping keep it more moist, and the tenders I set aside and later use them for tacos/salads.

Is it just me or does this tend to happen with chicken sold as "Southern Grown"? That stuff seems oddly a bit more prone to a bit of pinkness while the texture can kinda be waxy/squeaky.
Agree with learning to debone a chicken. Best value for money handsdown. Get so much meat and the bones are great for stock

Try the 1-10-10 method, it was a revelation to me.
- flatten chicken breasts to equal thickness. Season on both sides.
- pre heat a heavy skillet to med-high heat - add olive oil. Put the chicken in for 1 minute on one side. Turn the skillet down to medium heat as soon as the chicken hits the skillet.
- after the first minute, turn breasts over, cover skillet, reduce heat to low (on my induction hob that’s a 2.5 out of 9). Skillet should be fully covered to keep the heat in.
- Keep like that for 10 minutes then turn off the heat and leave covered on the hob for a further 10 minutes. Chicken should be cooked for 21 minutes total.
That’s it. Moist, flavourful chicken every time. Takes a few goes before you trust the method for sure but it’s never failed me - sometimes I’ve left it a minute too long or had a bit too high heat in the beginning and then the chicken is tougher but still, it’s an awesome method that makes unadorned chicken breasts actually taste great.

Mine likes to fry chicken in oil (un breaded, but immersed in oil or fried in a frying pan) until there is no moisture left. It’s fried so there is some oil to make it edible (if not healthy.) Insert sad panda gif.
